Ingredients
1BoxPasta16 ounce
1Red Bell Pepperchopped
1Green Bell Pepperchopped
1Package Mini Pepperoni4 ounce
1CupGrape Tomatoeshalved
8OuncesFresh Mozzarella Pearls
1CupMushroomssliced
2Cans Olives2.25 ounce, sliced
1/3CupParmesan Cheesefreshly grated (plus more for garnish)
Drain and place in ice water to cool down completely.
Drain and place in a large bowl.
Add the peppers, pepperoni, tomatoes, mozzarella, mushroom, olives, and Parmesan cheese.
1 Red Bell Pepper, 1 Green Bell Pepper, 1 Package Mini Pepperoni, 1 Cup Grape Tomatoes, 8 Ounces Fresh Mozzarella Pearls, 1 Cup Mushrooms, 2 Cans Olives, 1/3 Cup Parmesan Cheese
Mix dressing ingredients together in a jar and then pour over pasta and mix until coated.
1/2 Cup Oil, 1/3 Cup Red Wine Vinegar, 1 1/2 teaspoons Oregano, 3/4 teaspoon Salt, 3/4 teaspoon Garlic Powder, 1/4 teaspoon Black Pepper
Cover and place in fridge until ready to serve.
Sprinkle with more Parmesan cheese before serving.

Pasta salad will keep for 5 days in the refrigerator.
