Pulled Pork and Sweet Corn Pizza with Cilantro Cream
Pulled pork pizza on the grill is our new most favorite thing! Add some sweet corn and cilantro cream, and you have the most delightful grilled pizza in town!
Add 2 ½ cups flour with the yeast which has bubbled and mix well in Kitchen Aid or with a dough hook.
5 Cups Flour
Add additional 2 ½ cups flour and salt, knead until smooth.
1 Tablespoon Salt
Cover bowl with saran wrap. Let dough rest in a ball for 10 to 20 minutes.
Remove dough from bowl and add more flour as needed (a little at a time) so it's not as sticky but only add as needed. Press the dough into a circle and brush one side with olive oil.
For the Pizza
Heat a grill to 500 degrees and put the oiled side down. Brush the top with more oil. Flip the dough as soon as marks appear and spread with cheese, all toppings except the cilantro sauce and close the lid for a minute or two to melt the cheese. Turn the flames down if needed.*See note for cooking in the oven.
Olive Oil, 2 Cups Mozzarella Cheese Shreds, Pulled Pork, 1 Cup Chopped Pineapple, 1/2 Red Bell Pepper, 1/4 Cup Red Onion, 1 Ear of Corn, 4 Slices Cooked Bacon
For the Cilantro Cream Sauce
Put all of the ingredients listed minus the sour cream into a blender and blend until smooth.
1 Avocado, 1 Clove Garlic, Half of a Small Jalapeño, 2/3 Cup Fresh Cilantro Leaves, 1/4 Cup Lime Juice, 2 Tablespoons Olive Oil, 2 Tablespoons Apple Cider Vinegar, 1/2 teaspoon Cumin, 1/4 teaspoon Kosher Salt
Add the sour cream and whisk until smooth.

* Alternately you could heat an oven to 500 degrees and prepare the dough, add the toppings and proceed, baking it until gooey and bubbly. Serve with a drizzle of fresh cilantro cream!Pizza will keep for 4 days in the refrigerator.
