This Pumpkin Chocolate Chip Baked Oatmeal is soft and packed with pumpkin spice flavor. Made with wholesome oats, pumpkin puree, apple butter, maple syrup, and chocolate chips, it's an easy make-ahead breakfast that's perfect for busy mornings and fall weekends.
Preheat the oven to 350℉ and grease an 8x8-inch baking dish.
In a large mixing bowl, whisk together the apple butter, pumpkin purée, maple syrup, olive oil, apple cider vinegar, vanilla, cinnamon and pumpkin pie spice.
⅓ Cup Apple Butter, 1 Cup Pumpkin Purée, ¼ Cup Maple Syrup, 3 Tablespoons Olive Oil, 1 Tablespoon Apple Cider Vinegar, 1 teaspoon Vanilla Extract, ¼ teaspoon Cinnamon, 1 teaspoon Pumpkin Pie Spice
Add the milk, oats, baking soda, salt and chocolate chips and mix well with a wooden spoon to combine. Spread into the prepared baking dish.
1 ½ Cups Skim Milk, 1 ¾ Cups Old Fashioned Rolled Oats, ½ teaspoon Baking Soda, ¼ teaspoon Sea Salt, ½ Cup Semi Sweet Chocolate Chips
Top with more chocolate chips if desired and bake for 35-40 minutes, until the edges are browning and the center is just set.
Let the baked oatmeal cool for at least 10 minutes to solidify a little more then serve as is or our kids love a little dollop of vanilla yogurt on it.
