Instructions
Heat a stainless pan over medium heat.
Once hot, add the olive oil and allow to get hot for 30 seconds to 1 minute.
Add the peppers and onions and stir occasionally for 2 minutes.
Turn to medium low and saute for another 10-15 minutes, or until tender and beginning to caramelize.
Set aside.
Heat a grill pan over medium high heat.
Slice the sausages in half lengthwise (no need to remove any casing, it will just hold things together) and place cut side down.
Immediately turn the heat down to medium.
Cook for 10-15 minutes, turning frequently, until cooked through.
Immediately place in a large bowl with the seasonings and toss to coat.
Fill a tortilla with peppers and onions, meat and desired toppings.
Enjoy!
