Place all potatoes cut side down and bake for 30-35 min, turning over after 15 minutes or once they begin to brown.
Remove from the oven and top with remaining fresh herbs and serve immediately.

Store leftovers in an airtight container in the refrigerator for up to five days. To reheat, use the microwave, or for the best texture, warm them in the oven or an air fryer.
