Heat oven to 400℉ and drizzle oil on a cookie sheet (or heat the air fryer for more crunch to 400℉. We prefer the air fryer).
2 Tablespoons Oil
Bring a large pot of water to a boil over high heat.
Cut potatoes in half or quarters depending on the size. Add the potatoes along with a tablespoon of kosher salt and stir. Allow to boil until tender.
1 Pound Red Potatoes, 1 Tablespoon Kosher Salt
Drain the water and allow the pot to steam dry the potatoes. Place the lid on the pot and shake vigorously. Remove the lid and salt the potatoes.
1/2 teaspoon Salt
Place the oiled cookie sheet in the oven to heat. Don't forget it's in there!
Remove the pan from the oven and pour on the potatoes, stirring the oil all over them.
Bake for 30-40 min until crisp, stirring halfway through or 18-22 minutes, stirring halfway for air fryer.
Remove from the oven. Mix the butter, honey, mustard, salt and pepper in a dish and drizzle over the potatoes. Stir well. Sprinkle flaked sea salt and enjoy!
