Roasted Strawberry Blue Cheese Tarts

  • 5.5 oz Treasure Cave Mild Blue Cheese Wedge
  • 1/2 Lemon zested
  • 1 Tablespoon Lemon Juice
  • 2 ½ Tablespoons Plain Greek Yogurt
  • 1 teaspoon Olive Oil
  • 4 Cups Strawberries chopped
  • 1/4 Cup Sugar (more if your berries are not sweet enough)
  • 2 Tablespoons Balsamic Vinegar
  • 2 teaspoons Vanilla Bean Paste or scrape 2 beans
  • 2 Sheets Puff Pastry thawed
  • 1 Egg
  • 1 Tablespoon Water
  • 2 Tablespoons Pistachios chopped
  • Thyme for garnish

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a blender, add the cheese, lemon zest, lemon juice, yogurt and olive oil. Blend, scraping down the sides as needed until smooth. Set aside.
    5.5 oz Treasure Cave Mild Blue Cheese Wedge, 1/2 Lemon, 1 Tablespoon Lemon Juice, 2 ½ Tablespoons Plain Greek Yogurt, 1 teaspoon Olive Oil
  • Prepare the strawberries by gently folding the strawberries, sugar, balsamic vinegar and vanilla bean together. Set aside.
    4 Cups Strawberries, 1/4 Cup Sugar, 2 Tablespoons Balsamic Vinegar, 2 teaspoons Vanilla Bean Paste
  • Roll out each puff pastry. Cut into three strips and then each strip into 3 squares using a sharp knife.
    2 Sheets Puff Pastry
  • Score (do not cut all the way through!) a small border around each square. Spread a little of the cheese filling on each square.
  • Top with the berries and a little juice (not too much or it will run).
  • Mix the egg and water and brush around the edges. Place on the prepared baking sheet.
    1 Egg, 1 Tablespoon Water
  • Bake at 400 degrees F for 20-25 minutes until golden brown.
  • Sprinkle with pistachios and thyme.
