Instructions
In a bowl, add all of the salad ingredients and drizzle in the dressing, tossing to coat evenly.

1/2 Cup English Cucumber,
1 ¼ Cups Manchego Cheese
Lemon Dressing
Whisk the dressing together and set aside.
3/4 Cup Light Extra-Virgin Olive Oil,
1/3 Cup Fresh Lemon Juice,
1 teaspoon Dijon Mustard,
2 teaspoons Honey,
3/4 teaspoons Salt,
1/2 teaspoon Black Pepper
