Juicy chicken breast adds a little protein to this simple berry avocado salad with a light poppyseed dressing. Throw on a little gorgonzola, candied nuts and you've just made the most perfect dinner salad recipe.
Sprinkle each chicken breast on top and bottom with seasoning and cook over medium high heat with a drizzle of oil. Turn down to medium and cook 4-5 minutes per side.
2 Chicken Breasts, 2 Tablespoons Brown Sugar BBQ Rub
Remove to rest for 3 minutes then thinly slice.
Whisk together dressing ingredients and keep in the fridge to chill until ready to use.
5.3 oz Plain Greek Yogurt, 1/3 Cup Sugar, 2 Tablespoons Prosecco or Champagne Vinegar, 1 Tablespoons Poppyseeds
Toss together lettuce, spinach and kale, avocado slices, berries, nuts, and cheese. Top salad with chicken and serve with poppyseed dressing.
