With the mixer on low, slowly add warm water and mix 2 minutes, until dough is smooth and pulls entirely away from sides of mixing bowl. Cover bowl with a towel and let dough rest 30 minutes.
2 Cups Warm Water
Line a baking sheet with parchment paper. Preheat oven to 450 degrees F.
On a lightly floured work surface, roll dough into a large rectangle (about 1/4" thick). Sprinkle heavily with mozzarella cheese and roll up like you would cinnamon rolls. Cut into 1½- to 2-inch slices with unflavored dental floss or a serrated bread knife and place on prepared baking sheet.
