In a large bowl, beat the cream cheese until smooth.
1 Brick Cream Cheese
Add the powdered sugar, cocoa and salt and beat again.
3/4 Cup Powdered Sugar, 2 Tablespoons Cocoa, Pinch Salt
In a small, microwave safe bowl, add the chocolate chips and melt at 30 second intervals, stirring until smooth.
1 Cup Semi Sweet Chocolate Chips
Add to the cream cheese and beat until smooth.
Lay out a piece of saran wrap, using a spatula to form the mixture into a ball shape, place it on the plastic and wrap tightly, forming into a solid ball.
Place in the fridge overnight (shaping as needed) or the freezer for 1 hour, reshape and again for another 3 hours until firm.
Top with frosting and chill in the fridge until company arrives, setting it out 15 minutes before you eat it.
For the frosting
In a saucepan, whisk together the sweetened condensed milk, egg yolk, brown sugar and vanilla until smooth.
3/4 Cup Sweetened Condensed Milk, 1 XL Egg Yolk or see note for using a large egg, 1/4 Cup Brown Sugar, 1/2 teaspoon Vanilla
Turn the heat to medium and bring to a simmer, stirring occasionally.
Allow to cook for 5 minutes without coming to a boil.
Turn the heat to medium low and while stirring, cook for an additional 8-10 minutes or until very thick.
Stir in the coconut and nuts.
3/4 Cup Shredded Coconut, 1/2 Cup Chopped Pecans
Remove from heat to a bowl, cool for 10 minutes, stirring occasionally.
Top the cheese ball.
Notes
Use 1 large egg yolk and then in a small bowl add a second egg yolk and whisk then pour out half.Store, covered in the refrigerator for up to 2 weeks.
