In a blender, combine the vinegar through the mayo. Pulse in the vegetable oil and then remove to a bowl and stir in the poppy seeds.
1/4 Cup White Vinegar, 2 Tablespoons Milk, 1/3 Cup Sugar, 1/2 teaspoon Salt, 1 teaspoon Ground Mustard, 1 Tablespoon Onion, 1/3 Cup Mayonnaise, 1 Cup Vegetable Oil, 1 Tablespoon Poppy Seeds

Place the chopped kale in a large bowl and squeeze some lemon over the top along with some salt. Toss everything together while squeezing and massaging the kale. Set aside in the fridge to rest for up to 12 hours or at least 5-10 minutes.
