Instructions
Cook the chicken per instructions as well as the rice and prepare the ranch.
[Cafe Rio Chicken]
For the ranch
Place all ingredients except the mayonnaise in a blender and blend until smooth.
1 Jalapeno,
1 Clove Garlic,
1 Tomatillo,
1 Handful Cilantro,
1 Lime ,
1 Cup Milk,
1 Package Hidden Valley Ranch
Whisk in the mayonnaise and store in the fridge in an airtight jar.
1 Cup Mayonnaise
Warm the tortillas and heat the oven to broil.
6-8 Fresh Tortillas
Place rice, beans, and chicken on the tortilla, fold in the ends and roll closed.
[Cafe Rio Rice],
Black Beans
Repeat with remaining tortillas.
Top with ranch and cheese and place under the broiler until melted.
Colby Jack Cheese
Serve immediately.
