I just cannot even, I mean, gosh! These are the best scone evah!!!! I even ate gobs of the dough and apples! I know, I should go hide in a box cowering in embarrassment but it was so good. And then, I stinking made the browned butter glaze. Just forget it. I was done in. Who knew that scones were more than delicious, but instead life changing? Liberte, liberte knew. You see we decided to work together and we talked about creating something perfectly delicious to go with yogurt. I thought scones. They are flaky and wonderful. It was perfect.

The older I get the more centered I feel in my life. I feel like I know myself better, I can make better decisions and I’m a little more aware of life, others and what’s truly important. One thing that I’ve really been working on lately is finding opportunities to make life special. I don’t mean spend gobs of money or take things over the top that aren’t necessary, but instead to make a special treat that I know my family will love, or go on a special mommy daughter date/ date with my husband. Just anything to really break up the monotony of life and instead be really present and take it all in. That’s really why I decided to make these scones.

When I was growing up I remember thinking that scones, tarts and other pretty baked goods were for really special occasions like brunch in a fancy restaurant or for really wealthy people with maids etc. I know, a little ridiculous now that I’m grown up. I don’t know where I got that thought, but I always loved the idea of being fancy and feeling special. I still think we all need to take a little time to make something special, and just relax whether it’s a little brunch with your girlfriends, a private breakfast with your spouse before the kids wake up or an afternoon “tea party” with your little girls.

So, we discovered Liberte Greek yogurt and it is so creamy, thick and although it’s healthier than many yogurts it feels so decadant. Which means for the little “tea party” I was going to have with the girls I wanted a scone that would go well with it. Browned butter apple pie scones. Don’t worry the browned butter glaze is not too rich for anyone. It’s a cooked glaze and our three year old devorured the spoon to lick.

I started these scones with self rising flour. That was my first stroke of genius. Hooray for letting the flour do all of the work without needing anything else. Then there’s the apples. Just try to not eat them all before they even go in the dough. All you have to do is cook them with a little butter, remove from heat and toss with brown and white sugar. Oh my sweet mercy. Delicious. Next just cut butter into the dry mixture, add the apples (the flour keeps them from clumping and sinking to the bottom) mix and stir in the cream. You’ll want to let the dough rest for 30 minutes in the freezer so the gluten can rest. Shape, bake, and start on the glaze right before they are done. Just brown butter, add powdered sugar and a little cream. Whisk and quickly drizzle over the hot scones.

Let the scones rest for 10 minutes so the texture can settle and then enjoy warm scones and creamy, delightful yogurt, taking in every little bit of this beautiful life we live. Do you do anything to slow down and make life special?

I too must not of cooked the apples until they were dry. I added more flour but that didn’t work, so I just baked them. Just wanted to say , I will be making them again, but make sure I do it right next time! They were delish!!
It’s my problem almost every time, wanting to stop cooking before they are dried out but it makes such a huge difference.
these are so delicious I am making them a second time! I realized my mistake was not cooking apples til ALL liquid is gone- there was a bunch of liquid in mine again, even with the right apples. I think next time (there WILL be a next time…) I won’t cover my skillet while the apples cook, and I’ll use a little less butter on them too. This time I added a bit more flour to make up for the wet apples…I will let you know how they turn out when I bake them in the morning…set dough in fridge, hopefully that works okay!
hmmm, how long are you cooking the apples? I’ve made them a few more times since you last did and the liquid all cooks out. Maybe let them go a little longer.
I would love to see step by step pictures for your recipes- especially this one. My dough was waaay more wet than yours looks. I added about 1/2 cup more flour- and it’s still wet. could be because I didn’t use granny apples 🙁 It is baking now, we’ll see how it turns out!
Megan, I’ll have to try to do that. Step by steps take so much time and with little ones at home and one post already taking about 6 hours to do I just gave up on them. But I promise I will totally try to help.Granny apples aren’t as soft as other apples which keeps the moisture down, also making sure they are cooked until dry so no additional liquid gets added is key. When baking make sure they have space between them so they can evenly bake without steaming from being too close together. Sorry. 🙁 I wish I had more hours in the day, but I’ll certainly do my best to make this happen for you soon!
I followed your recipe exactly, but I didn’t get the same results that you did. I had to leaved the scones in the oven for longer than 14min. Also, the dough was way too wet to cut and separate before putting in the oven. Any suggestions?
