The weather has really been cooling off here in Utah, and while I adore boots and sweaters, I hate the mushy snow. Not only do I freeze all winter, but our family really enjoys spending time together outdoors, so once winter hits we have to change things around a bit.
This Pineapple Salsa completely describes our winter. My husband and I really want to stay present in our lives, especially in the raising of two little girls. We don’t ever want to look back on our lives and feel like we missed out on special opportunities or experiences.
I once learned that one of the biggest regrets a person shares in their last moments of life is that they didn’t spend enough time with their loved ones doing the things that are important. Supposedly this is especially true of those who are very wealthy. We certainly are not millionaires, but we still work hard and we don’t want to ever lose sight of those important, little moments with our loved ones.

Enjoying Life Every Day

One thing we have decided as a couple is that every day we need moments together as a family where everything is put aside and we are just talking, sharing, learning, growing, and becoming closer in our relationships with one another. This is getting more and more difficult as the years go on because of school, the blog, etc., however we absolutely refuse to give up.

A close family that works and plays together creates happier, healthier, more responsible and confident children. Our family reads together every night, but in addition to that, we play games, serve those around us and we cook together.

We have found that making healthy snacks or treats during the winter, especially ones that are light and citrusy create happy feelings during the gloom of winter, and eating better helps us to feel better in the cold, slow months when most people tend to pack on the pounds. We will make a yummy snack, invite a friend over and laugh until our sides ache. We don’t need fancy toys, expensive vacations or getting all dolled up to go out, we just need each other and that helps us to enjoy life every day.

This Salsa is an older recipe that we generally make during the summer, but during the winter, we can just grab a can of Del Monte Pineapple and Peaches and in no time, we’ve got a fun snack that the kids and adults love, and it’s healthier than all of the cheesy dips going around during the holidays. Description

A bright and cheery salsa that will be sure to wake up those taste buds!

Ingredients 

  • 1 Can Del Monte Pineapple Chunks
  • 1 Can Del Monte Sliced Peaches, , light
  • 1/4 Cup Red Onion, , diced fine
  • 1 Tablespoon Cilantro, , chopped
  • 2 Tablespoons Green Pepper, , diced
  • 1/4 Cup Red Pepper, , diced
  • 1 Jalapeno, , seeded and diced
  • 1 Pinch Sea Salt
  • 1/2 Lime, , juiced 

Instructions

  • Mix everything together, and enjoy!
