So this happened. And I totally forgot about them. Not because they weren’t amazing but because I made so many recipes that week I just got distracted with editing those photos. I saw our white chocolate cranberry cookies sitting there on the computer and I literally can taste that chewy on the outside, soft in the middle with that creamy, white chocolate and big juicy craisins cookies!
Phew, I’d probably better get on with it before I find myself making cookies in the middle of the night. Heaven knows I don’t need that soft, delicious, buttery dough… GAH!
Why do I write when the munchies are bound to happen? It’s like grocery shopping, I need to do it on a full belly.
Soft White Chocolate Craisin Cookies
To make extra soft white chocolate craisin cookies you’re going to want to concentrate on the butter, sugar and eggs.
- The butter should be softened, not cold and not melted and it should be beat with the sugar for over a minute. There’s an actual scientific change that occurs when you beat butter and sugar together and that will make for an extra soft cookie.
- The eggs have to be large eggs and should be room temperature, not cold. This will make sure that the proper amount of egg goes into the cookie as medium and extra large eggs will change the recipe. A cold egg will also drop the temperature of the dough and change your bake on the cookies.

Soft White Chocolate Cranberry Cookies
Ingredients
- 3/4 cup craisins
- 2 tablespoons hot water
- 11/4 teaspoon baking soda
- 3/4 cup salted butter
- 1/2 cup white sugar
- 3/4 cup brown sugar
- 1 large egg plus 1 large egg yolk, lightly whisked (eggs should be at room temperature.)
- 11/2 teaspoon vanilla
- 1 1/2 teaspoons cornstarch
- 2 1/4 cups plus 1 tablespoon flour sifted
- 3/4 cup white chocolate chips
Instructions
- Preheat the oven to 325 degrees.
- In a small bowl add the craisins, hot water and baking soda.
- Stir and set aside.
- In the bowl of the standing mixer, cream the butter and sugars for 1 minute.
- Add the vanilla and egg mixture and mix again.
- Add in the raisin mixture and stir to combine.
- In a medium bowl, whisk together the flour and cornstarch.
- Add the dry ingredients to the mixer and just before it's done mixing add the chocolate chips.
- Wrap tightly with saran wrap and set in the fridge for 15-20 minutes.
- Pull it out for 10 minutes and then scoop onto cookie sheets.
- Bake for 10 minutes and remove from the oven.
- Resist if you can or eat right away!
