Alright, it’s not a McRib. In fact, I’ve never even had a McRib sandwich, but I noticed a billboard advertising that the McRib was back a while ago, and decided that while I probably wouldn’t ever go buy one it is a great idea for using up leftover ribs from a weekend BBQ. Like, last week we made these amazing, fall off the bone, dry rub baby back ribs. Oh my heavens, they are amazing, and they just keep giving in this sandwich.

I know that not everyone ends up with leftover ribs, usually everything at a BBQ has a way of flying off the picnic table once it’s finally time to eat, but occasionally you do, and if you’re anything like us, the idea of reheating ribs doesn’t sound nearly as delicious as eating them fresh. BUT, a rib sandwich slathered in BBQ sauce and melted cheese? Yeah, yeah I could go for that. Add a little dairy/cheese to anything and I’m totally sold.

The really nice thing about this sandwich is that it doesn’t just use up the ribs meat that’s leftover, but you can also use those last couple hamburger buns, slices of cheese and whatever else you have lying around. It’s like a pulled pork sammy but better, you get those crispy little edges from the ribs… oh my, oh my!!! Plus, there’s bacon. Oh bacon, how I love thee. And BBQs, and summer, and food… Can you tell we are big summer people? I just love that you can do so much more impromptu gathering, socializing, and of course, eating. Summer is definitely our favorite time of year.

Can You Cook Bacon In The Oven?

Cooking bacon in the oven is easy.

Line a baking sheet with foil.

Set your oven to 400 degrees.

Lay bacon in a single layer onto baking sheet, making sure not to overlap.

Bake until your desired crispness, 15 to 25 minutes.

How Long Can Bacon Be Frozen?

Frozen food will stay safe to eat nearly indefinitely, if it is stored air tight.

But for the sake of quality and taste we tend to freeze bacon no more than a few months.

Can Cheddar Cheese That Has Mold Be Eaten?

Mold generally can’t penetrate far into hard and semisoft cheeses, such as cheddar, colby, Parmesan and Swiss.

You can cut away the moldy part and eat the rest of the cheese.

You should cut away at least an inch from the mold.

Ingredients 

  • Buns
  • Leftover BBQ Ribs, meat pulled off and shredded
  • BBQ Sauce
  • Bacon, cooked and chopped
  • Cheddar Cheese, sliced

Instructions 

  • Toast the buns on a grill or under a broiler.
    Buns
  • Top with shredded rib meat, bbq sauce, bacon and cheese.
    Leftover BBQ Ribs, BBQ Sauce, Bacon, Cheddar Cheese
  • Place it on the warming rack or over an a burner that is not on, close the lid and allow the cheese to melt.
  • Enjoy!

    Last year I tried one. A bunch of facebook friends were raving about it,so I was very excited. I thought it was awful! Not just fast-food awful, but truly disgusting. You know, there are some fast food items that taste pretty good. You know you shouldn’t like them, but you do. The McRib is not one of these. It was yucky. It is meat (I assume it’s pork) molded into a “rib shape” and coated with bbq sauce on a hamburger bun. Yours is waaaaayyyy better. I tried it today and it was fabulous!! Thank you!

    This could not have come at a better time–I JUST made spare ribs and have so much leftover! I used to eat McRibs just because my Dad raved about them (same with Big Macs) but I actually pretty much hated them. Meat molded into the shape of a “rib”? Gross. This version is MUCH better. Pass the yellow cheese, please.
