Lunch, oh how I hate lunch. No, I love lunch, but I hate that it’s a harder meal to figure out what to make and in the middle of the day it’s hard to have the time to make something delicious which is why I often end up eating a bowl or oatmeal or salad. Lately avocado toast has been my go to and Cade and I are tied on this one.

I tend to go more turkey bacon avocado because I’m a nursing mom and am always hungry so protein makes its way into most of my meals. Which is a good thing, protein is so essential for a healthy lifestyle. I love to just roll up little pieces of turkey and sprinkle on some chopped bacon. It’s filling, it’s creamy, salty and healthy all at once.

Ingredients 

Berry Avocado Toast

  • 1 Slice eureka! Seeds the Day Bread
  • 1/2 Avocado, sliced
  • 1-2 Tablespoons Small Curd Low Fat Cottage Cheese
  • 1 Strawberry
  • 4 Blueberries
  • 2-3 Blackberries
  • 2-3 Raspberries
  • 1 Teaspoon Honey
  • Squeeze of lemon, if desired

Bacon and Egg

  • 1/2 Avocado, sliced
  • 1 Slice Bacon, cooked
  • 1 Large Egg
  • 1 Slice Cheddar Cheese
  • Pepper

Greek

  • 1 Slice eureka! bread
  • 1/2 Avocado, chopped or sliced
  • 1-2 Tablespoons Tomato, chopped
  • 1 Tablespoon Cucumber, heaping, chopped
  • 1 Tablespoon Feta
  • 1 Tablespoon Black or Kalmatta Olives
  • Dash of fresh garlic, minced
  • Salt and Pepper
  • Olive Oil

Caprese

  • 1 Slice eureka! Bread
  • 1/2 Avocado, sliced
  • 1 Small Handful Grape Tomatoes, halved
  • 1/4 Cup Mozzarella Pearls
  • 1/2 Cup Balsamic Vinegar
  • 3-4 Basil Leaves
  • Salt and Pepper to taste

Fajita

  • 1 Slice eureka! bread
  • 1/2 Cup Avocado, sliced
  • 1/2 Cup Peppers, sliced
  • 1/4 Cup Mexican Shredded Cheese
  • Dash of Cumin
  • Salt and Pepper to taste
  • Squeeze of lime

Turkey Bacon

  • 1 Slice eureka! Bread
  • 1/2 Avocado, sliced
  • 1 Slice Turkey , cut in thirds, more if desired
  • 1 Slice Bacon, cooked and chopped
  • Pepper to taste

Instructions

Berry Toast

  • Toast the bread and add the sliced avocado.
  • Scoop the cottage cheese into the center and arrange with berries.
  • Squeeze a tiny squirt of lemon and a drizzle of honey.

Bacon and Egg

  • Toast the bread.
  • Add the avocado and bacon.
  • In a small nonstick skillet, add a teaspoon of oil or nonstick spray and heat to medium high heat.
  • Add the egg and a touch of salt and pepper.
  • Cook until just set and gently flip, adding the cheese and put a lid on the skillet.
  • Cook for another few seconds until the cheese is just melted.
  • Quickly place on the avocado toast.

Greek

  • Toast the bread and add the avocado.
  • In a small bowl, toss together the tomatoes, cucumber, olives, and feta.
  • Add a drizzle of olive oil and the garlic.
  • Toss and sprinkle with a little salt and pepper to taste.
  • Top the toast.

Caprese

  • In a very small saucepan over medium heat, add the vinegar and bring to a simmer.
  • Turn to low and continue to simmer until reduced and coats the back of a spoon, about 5-8 minutes.
  • Remove to a bowl to cool.
  • Layer the avocado, tomatoes, mozzarella, and basil on the toast and drizzle with a little olive oil and balsamic reduction.

Fajita

  • Toast the bread and set aside.
  • Heat a skillet to medium heat and add a drizzle of olive oil.
  • Add the peppers and cook, stirring occasionally for 3 minutes or until the peppers are tender.
  • Remove from heat.
  • Add the avocado, peppers, cheese, cumin and lime to the toast and enjoy!

Turkey Bacon

  • Toast the bread and add the avocado.
  • Roll the turkey and add on top with a sprinkle of bacon and a dash of pepper.
