Have you ever heard of the movie, Where the Red Fern Grows? I can’t really remember anything other than a dog and I cried my eyes out at the end, but that movie has popped into my head all night tonight so now I’m on the hunt. Is there anywhere to watch it? I am pretty sure it was for kids, right? So our girls could watch it? Anyway, this post has nothing to do with dogs, but bbq chicken bacon bombs will definitely be one of those recipes that keeps popping into your mind.

The other night we were shooting off old favorite tv shows with our good friends while I convinced them to take more and more of the recipes I’d been testing all day. These cheesy little bacon bombs were one of our favorites and perfect for serving up at a fun Halloween party. And why not bust out a little tv trivia with your friends while you’re at it?

I mean, who wouldn’t want to remember classics like, Gummy Bears, Chip and Dale Rescue Rangers, Macgyver, and Touched By An Angel? Oh yeah buddy, nothing like fried bread stuffed with BBQ chicken, bacon and cheese then drizzle with a little extra BBQ sauce. It was so much fun and I’m so full I’m pretty sure my pants are about to bust the button clean off.

How Long Can You Keep Cooked Chicken?

Cooked chicken is safe refrigerated for 3-4 days.

Cooked chicken should be covered or placed in a plastic bag for best storage.

Place the chicken in a heavy duty freezer bag and store in the freezer for up to 4 months.

What Is The Best Way To Cook Bacon?

Bacon can be fried, microwaved or cooked in the oven.

The best way to cook bacon is in the oven.

Heat your oven to 400 degrees, and place bacon in a foil-lined cookie sheet.

For extra crispy bacon, place the bacon on a rack in a foil-lined cookie sheet.

Bake for about 15-20 minutes, depending on your desired crispness.

Ingredients 

  • 1 breast of chicken, cooked and shredded
  • 8 biscuits, flattened and cut in fourths
  • 1 1/2 cups cheddar cheese, shredded
  • 3/4 cup bbq sauce
  • 4 slices of bacon, cooked and chopped
  • cooking oil for frying

Instructions

  • Heat a dutch oven over medium heat filled 1/3 full of oil.
  • Meanwhile, in a bowl mix together the chicken, bbq sauce, cheese and bacon.
  • Scoop small spoonfuls into each piece of dough and pinch closed.
  • Place 3-4 in the oil.
  • Fry, turning often, until golden in color, about 1 minute.
  • Remove to a paper towel lined baking sheet and then serve immediately.

Notes

to reheat, cover with foil and reheat in 350 degree oven, or reheat in microwave
