Cade loves spicy buffalo chicken wings, but I’d rather have sweet bbq or teriyaki wings. I don’t really do the whole spicy thing. But with Father’s Day quickly approaching I can’t help but want to push aside my own likes and think more about what would make Cade happy. This salad is totally everything I’ve learned about marriage.

Well, not everything. Because I’ve also learned that “none of us marry perfection; we marry potential” Elder Dallin H. Oaks. That has been an amazing reminder for me. Totally doesn’t apply to this salad though, Cade says it already is perfection which of course I had to reply with, “So why don’t you marry it!” Because I’m 7 and ridiculous.

The point is, marriage is all about learning to be full of love. Love is unselfish, love is kind, love it giving and love is mindful. So I don’t like spicy, why should Cade have to live his life never having something he loves for dinner because I don’t like it? But because Cade is the most generous soul ever he would never ask me to do that which only makes me want to do things for him even more, hence the buffalo chicken salad with blue cheese dressing.

So we meet halfway. I don’t want a big plate of wings, but I love a good salad. This one is packed full of fresh veggies, something we both not only love and crave (we are really big on packing in as man fruits and veggies into our day as possible. You’d be surprised how much better you feel and how much less you crave the junk when you eat more fresh veggies) but it also helps to balance out that spicy chicken. Oh and the croutons! You guys, it’s Hawaiian Sweet Rolls we turned into sweet and salty, crunchy little croutons of heaven.

It’s not crazy spicy, but it definitely needs cool, crunchy veggies and a light and creamy dressing like this Marzetti Blue Cheese Dressing. We can’t be perfect in everything we do, but we love that certain food choices are the potential for a healthier life. That’s why we’ve become picky with salad dressings. We chose Marzetti because there aren’t any MSG’s, preservative free and it’s real food that tastes like I made it myself. It’s perfect with this salad. See, Cade gets what he wants, I get what I want, and we both appreciate each other for being mindful of the other. And seriously, if you take away one thing other than putting a little more effort into marriage, let it be that it’s the season for fresh veggies and we challenge you to make this the summer of fresh and wonderful. Ingredients

For the Buffalo Sauce

• ▢ 1/3 Cup Franks Hot Sauce
• ▢ 3 teaspoons Vinegar
• ▢ 1 Dash Worcestershire Sauce
• ▢ Pinch Cayenne
• ▢ Dash Garlic Powder
• ▢ 1/4 Cup Butter

For the Salad

• ▢ 2 Small Chicken Breasts, chopped
• ▢ 1/2 Cup Celery
• ▢ 1/2 Cup Carrots, sliced
• ▢ 1 Cup Sugar Snap Peas
• ▢ 1 Cup Tomatoes, halved
• ▢ 1/2 Bundle Romain Lettuce, chopped
• ▢ [Marzetti] Blue Cheese Dressing

For the Croutons

• ▢ 2 Hawaiian Sweet Rolls, cut in 1" cubes
• ▢ Olive Oil
• ▢ Sea Salt

US Customary - Metric

Instructions 

• In a small sauce pan over medium heat, add all of the buffalo sauce ingredients and whisk until smooth, about 3 minutes.
  1/3 Cup Franks Hot Sauce, 3 teaspoons Vinegar, 1 Dash Worcestershire Sauce, Pinch Cayenne, Dash Garlic Powder, 1/4 Cup Butter
• Set aside.
• Heat a nonstick skillet over medium heat and add 2 Tablespoons of olive oil.
  Olive Oil
• Add the bread and cook, stirring occasionally for 5-6 minutes or until golden and crunchy.
  2 Hawaiian Sweet Rolls
• Add a sprinkling of salt and set aside on a plate.
  Sea Salt
• Heat the skillet back to medium high heat and add a drizzle of olive oil.
  Olive Oil
• Add the chicken and a sprinkling of salt and pepper.
  2 Small Chicken Breasts
• Cook, stirring occasionally until golden and cooked through, about 3-5 minutes.
• Turn the heat to low and stir in the buffalo sauce and then remove from the heat.
• To assemble, add the chopped lettuce to a platter.
  1/2 Bundle Romain Lettuce
• Layer the chicken, veggies and croutons and then drizzle with dressing.
  1/2 Cup Celery, 1/2 Cup Carrots, 1 Cup Sugar Snap Peas, 1 Cup Tomatoes, [Marzetti] Blue Cheese Dressing
• Serve immediately.
