Hey everyone, my name is Sarah and this possibly could be the biggest day of my life. I get the privilege to have one of my family recipes, Homemade Macaroni and Cheese, posted on Sweet Basil!! Someday I hope to aspire to the level of Carrian’s greatness. But I know it’s just one recipe at a time. (Oh, aren’t you so funny, Sarah!)  So here’s the first: Homemade Macoroni and Cheese…yes, please! This is a recipe that’s been floating around our family for a little bit and with some tweaking has become one of our favorites–all of the comforts of the classic Kraft, but healthier and more flavor. Enjoy!

How Do You Know When Macaroni Is Done?

The only way to know when pasta is done, is to taste it.

Pasta, including macaroni should be cooked al dente, or firm to the bite.

When pasta is overcooked, it becomes gummy, so the old saying “if it sticks to the wall, it’s done” is really untrue.

If it sticks to the wall, it is overdone.

How Long Will Macaroni and Cheese Keep?

It is safe to keep your baked macaroni and cheese for up to 3 days.

It should be cooled, covered tightly and kept in the refrigerator.

Can Baked Macaroni and Cheese Be Frozen?

Baked macaroni and cheese can be frozen.

Cover the macaroni and cheese with plastic wrap and foil and freeze for up to 2 months.

Homemade Macaroni and Cheese...yes please.---all of the comforts of the classic Kraft, but healthier and more flavor. Enjoy!

Ingredients 

For the Macaroni and Cheese

  • 3 Tablespoons butter
  • 3 Tablespoons flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon dry mustard
  • 1 teaspoon Worcestershire sauce
  • dash of cayenne
  • 1 qt tomatoes
  • 2 cups cheese, grated
  • 2 cups macaroni, cooked

The toppings

  • 6 slices bacon, cooked and cut into small pieces
  • 3/4 cup bread crumbs
  • 2 Tablespoons butter
  • 1/4 cup Parmesan

Instructions

  • Melt 3 tablespoons butter in pan, blend in flour and seasonings.
  • Add tomatoes and cook until mixture thickens.
  • Add cheese and stir until completely melted.
  • Remove from heat and add Worchestershire and macaroni.
  • Put in a 2 qt. (8x8) casserole dish.
  • Sprinkle with bacon, bread crumb mixture (combine 2 Tablespoons butter and the bread crumbs, melt together in a separate pan. Then add the Parmesan cheese.
  • Cook until the butter is melted. Remove from heat.), add cheese on top.
  • Bake 375 degrees 25-30 minutes.
  • Deliciousness.

Notes

The picture shows wheat noodles, which make the dish quite tasty. You can change up a lot of things from the noodles to the cheeses. I hope you all enjoy!
Stored covered, in the refrigerator, mac and cheese will keep for up to 5 days.
