Just throw tortellini and all of your favorite ingredients in a slow cooker and let it do all the work for one pot slow cooker garden tortellini.
I’m always a little weary of the one pot meals. We have a few, One Pot Lasagna Pasta and Slow Cooker Chicken Alfredo Rice Casserole for example, and they really do in fact turn out without dirtying a sink of dishes, however we’ve also tried a few from pinterest and been greatly disappointed in the lack of flavor. Our one pot slow cooker garden tortellini took 3 tries to get just right, but we love the results.
Every summer I can’t get enough of the fresh produce. My parents have a ginormous yard and garden, and I mean huge garden and we reap the benefits of their hard work whenever we go to visit, but we have yet to have our own garden like that. Our backyard just isn’t big enough. Someday we will change that but for now we hit up our parents or the local farmers markets whenever we can.
The only tricky thing is, like kids who take too much dessert my eyes are also bigger than my belly as I always get more than we can use, so I’m left with random tomatoes, zucchini and whatever else. Hence the one pot tortellini. I thought, if I could get the measurements right and just throw it all in the slow cooker that would be such a lifesaver and the slow cooker totally doesn’t heat up the kitchen like the stove and oven do. I still prefer grilling or sauteing the zucchini, but out of laziness I’ll often throw it in the slow cooker anyway.

These wonderful, small kitchen appliances even contain the same three components: a pot, glass lid, and heating element.

Tortellini is small squares of pasta that are stuffed with meat or cheese and then rolled and formed into small rings.
In the end use whatever veggies you want.
Skip the cream for a healthier option.
Add mozzarella cheese for a not healthier option.;)
It’s all up to you, but the key to all of it is to use a really good sauce as your base and throw in fresh herbs and spices to brighten it all up.
One Pot Slow Cooker Garden Tortellini
- 1 Package Three Cheese Tortellini, dried
- 3 Cups Marinara of choice
- 1 Cup Chicken Broth
- 1 Zucchini, sliced
- 2 Cups Tomatoes of choice (we used a variety of small grape tomatoes)
- 1 Tablespoon Basil, minced
- 2 Cloves Garlic, minced
- 1/2 Cup Heavy Cream
- 1/3 Cup Parmesan Cheese
- Salt and Pepper to Taste
- 1 Teaspoon Dried Parsley
- In a slow cooker, add all of the ingredients and stir to combine.
- Turn the slow cooker to low heat and place the lid on.
- Allow to cook for 4 hours or until everything is tender and heated through.
