I found this awesome Ghirardelli peppermint bark in full size candy bars versus those little individually wrapped candies and I just had to make a super quick and easy Peppermint Bark Brownies recipe. 2 Ingredients, that’s all you need.
I’m totally that girl at the party. Especially baby showers or Relief Society meetings. Everyone is sitting there making small talk and I’ve got my eye on the food table. People are really enjoying each others’ company and then someone says, “well there’s food over there so help yourselves”.
YES!!! Those are the words I’ve been waiting for! My heart is palpitating I’m so darn excited to try everything!! And then the dreaded moment. It happens every time.
Why Are My Brownies Crumbly?
If you’ve waited to take your brownies out of the oven until there are no more crumbs stuck to the toothpick, brace yourself for the disappointment of overcooked brownies.
Instead of soft and fudgy, these are more likely to be dry and crumbly.
Take them out of the oven when there are still some crumbs on the toothpick.
No one moves. People literally turn right back into their conversations. WHAT?! You guys, there is food over there!! WHAT ARE YOU DOING?!
And like always, I stand up and head on over to the table. The first one. Every. Single. Time. And I know what it’s like to be the one that made all of that food. It’s a ton of work and you just want everyone to enjoy it.

And if not and it’s just you that will eat it, well you still need it stress free and quick so you can dig in right away without worrying that you’re the only one who’s there for the food.
Ghirardelli’s peppermint bark is such a holiday classic and I happen to love all things Ghirardelli. I am pretty sure I dream of visiting Ghirardelli just as much as I dream of Italy or Greece. No, really. So when I saw those full size bars in the grocery store I had to break out our box of double chocolate brownies and stuff them with the bark. It’s fudgey perfection with a hint of melty, pepperminty, chocolate goodness oozing out the middle. 2 ingredients, that’s all it takes and during the holidays, you don’t need more work on your shoulders.

Ingredients
- 1 Box Ghirardelli Double Chocolate Brownie Mix
- 4 Full size Ghirardelli Peppermint Bark Bars
Instructions
- Mix the brownies per package directions.
- In a greased 8x8" baking pan, pour in half of the batter.
- Lay each bar on the batter and save any leftovers for nibbling during baking.
- Top with the other half of the batter and bake per package directions.
- Cool for a few minutes and serve!

Oh my gosh, I’ve never related more to a post. I am TOTALLY the food girl at the party too! And for any other food girls who might be at my party this year,I feel as though I owe them these brownies. They look AMAZING!
