I know, it’s jello, but before you get scared and run away give it a chance. Raspberry jello salad does’t have to be the star of your Christmas dinner, but it can be a fun side dish for the kiddos and for any adults wanting a blast from the past. And this jello salad is a definitely blast from my past.
Growing up in Washington was awesome, wet, but awesome. We didn’t live by much family, but the few cousins we did live by always joined us for the holidays. It didn’t matter what side of the family anyone was on, or even if they were family as we often had meals with friends as well. That was always the fun part, a bunch of people crammed into our house, gobs of food and loads of fun and conversation for everyone.
As the years went by there were a few dishes that always appeared on our table and raspberry jello salad from my Aunt Sharon was one of my personal favorites. I loved the stuff. She may be a doctor, but Aunt Sharon totally rocks in the kitchen. I always loooooved jello as a kid, and I secretly still do. In fact I laugh a little that everyone thinks jello is such a waste when I would totally devour it. This jello salad is different than a normal jello salad (I do stay away from the cottage cheese version.) because it has applesauce in it and sour cream and marshmallows on top. I don’t know why, but it’s delicious and everyone needs one jello salad that will totally make the kids happy for such a big holiday meal.

GAH! Thank you! I’d misplaced this recipe which is almost identical to the one my mom used to make when we were all younger. The only difference is that she melted the marshmallows in the sour cream in the microwave (30 seconds and stirring at a time until they dissolve) and poured that over the top then refrigerating until set..LOVE THIS!
Enjoy!!
I have been looking for this recipe for a church dinner! My mom used to make it, but I lost the recipe long ago. It is delicious, even though I am not much of a jello fan in general. I hope it is a big hit.
You better let us know how it goes! Hope you love it!
