My husband is not the biggest fan of pork tenderloin for one reason, it’s always dry. Well, at least the ones we have had in the past. This healthy almond crusted pork tenderloin was the opposite. It is so moist and delicious and the perfect way to kick off our partnership with the National Pork Board. It makes sense right? We love pork more than anyone we know, so this is pretty much going to be a lot of fun. In fact, I’ve already been testing the next recipe and you guys, we are obsessed. It may just end up on our monthly menu and nothing gets repeated that often at our house. And this particular program is especially fun for us because it’s all about the mashups.

Between the almonds and the Panko you will definitely get the crunch your taste buds have been waiting for. We love that we can do most of the prep work for this recipe in advance and then all you have to do the next day is dip it in the almond mixture and bake. Perfect for when you are expecting company or you’re planning ahead for a busy day. So easy. So delicious! Healthy Almond Crusted Pork Tenderloin

Ingredients 

  • 1 Pork Tenderloin

Marinade

  • 3/4 Cup Plain Yogurt
  • 2 Tablespoons Olive Oil
  • 2 Cloves Garlic, minced
  • 1 Tablespoon Fresh Lemon Juice

Crumb Mixture

  • 1 Cup Almonds, finely chopped
  • 1/2 Cup Bread Crumbs
  • Pinch Salt and Pepper

Instructions 

  • Heat the oven to 450
  • Mix together the marinade mixture in a small bowl.
    3/4 Cup Plain Yogurt, 2 Tablespoons Olive Oil, 2 Cloves Garlic, 1 Tablespoon Fresh Lemon Juice
  • Rub the marinade all over the pork tenderloin.
    1 Pork Tenderloin
  • Place in a dish, cover with saran wrap and let rest in the refrigerator for 6-24 hours.
  • Remove the meat from the fridge and scrape off the marinade mixture.
  • Roll the pork in almond mixture and place in a baking dish.
    1 Cup Almonds, 1/2 Cup Bread Crumbs, Pinch Salt and Pepper
  • Cook tenderloin for ten minutes and reduce to 275.
  • Bake another 40-45 minutes or until internal temp of meat reaches 150.
  • Let rest for 10 minutes and slice.

    I agree with your husband – dry pork tenderloin is the worst. But when it’s done right, it’s the best! I’ve never tried putting a crunchy coating on tenderloin before, but I’ll be pinning this for next time. This pork would be great sliced up and put on a sandwich, too.
