Once upon a time, in a land not too far from here, also known as Lehi, Utah (pronounced LEE- HIGH in case you’re like Siri and say, Lehee) a little family loved this Cheesy Chicken Tortilla Soup so much that they decided to make a cheesy chicken tortilla dip for game day and the results were fantastic.
More than fantastic. Cade here and I just had to write this post myself because this dip is too good not to brag about. It’s really easy and it’s healthy if you only look at it or nibble on the cilantro. But who has time for that?!
This is why we work out, so we can eat dips like this one! Well, and I guess to keep ourselves healthy and strong too, but let’s focus on the food and let the healthy bloggers talk about kale and what not.
We start out with Salsa Con Queso which is found in the chip aisle. It’s got great cheesy flavor without you breaking your back to make your own sauce. The cream cheese is the next ingredient and Carrian keeps reminding me (over and over… love ya, Carri!) to tell you all that it MUST be softened cream cheese or it will leave those little cream cheese balls in the dip and that drives her crazy in any recipe. You also should use a hand mixer to beat the two ingredients together to help everything be smooth.
Now the good stuff, we stuff this dip full of shredded chicken (don’t use canned. I cannot handle that), sweet corn, fire roasted diced green chiles and taco seasoning for extra flavor. We like to sprinkle in some fresh cilantro to help brighten things up, but we’ve heard you all loud and clear that some of you don’t like that. We personally love cilantro, but it’s up to you.
It wont be game day without this cheesy goodness. Just add scoops tortilla chips so you can get as much as possible into your mouth!

Cheesy Chicken Tortilla Queso Dip
Cheesy Chicken Tortilla Queso Dip
Ingredients
- 1 Jar Salsa Con Queso
- 1 Package Cream Cheese, 8 oz, softened
- 1 Large Chicken Breast, cooked and shredded
- 1 1/2 Cups Frozen Corn, defrosted
- 2-3 Tablespoons Fire Roasted Diced Green Chiles
- 3 Tablespoons Taco Seasoning
- 1 Tablespoon Cilantro, chopped, plus more for garnish
- Scoops Tostitos Chips
Instructions
- Preheat the oven to 350.
- In a bowl, add the cream cheese and beat with a hand mixer until smooth.
- Add the salsa con queso and beat again until smooth.
- Add the chicken, corn, diced green chiles, taco seasoning and cilantro.
- Stir everything together and pour into an 8x9" baking dish.
- Bake for 20 minutes or until hot and bubbly.
- Serve with chips and an extra sprinkling of cilantro!

Hi Helen! This dip wouldn’t turn out quite right with our delicious nacho cheese sauce because you would be missing the salsa part of the salsa con queso you can buy in a jar. We will have to put salsa con queso on our list of recipes to test!
