We went to Red Robin a few months ago, and they had this seriously AWESOME Chicken Caprese Sandwich. We decided we could make it better at home…so here you have it!
What Kind Of Cheese Do You Use In Caprese?
The kind of cheese used for caprese salads and sandwiches is Mozerella Cheese.
Is Chicken Breast Healthier Than Thighs?
Both chicken thighs and breasts are good sources of lean protein.
Thighs have a few more calories, but thigh and breast meat actually do not differ that much in nutrient content.
How Long Will Pesto Keep?
Homemade pesto can be kept for 5-7 days in the refrigerator.
Purchased refrigerated pesto will keep for up to 14 days in the refregerator.

Chicken Caprese Sandwich
Servings: 5
Ingredients
- 2 chicken breasts large
- Mozzarella Cheese Fresh, sliced
- tomatoes Fresh Roma sliced
- Pesto See our Pesto recipe or you can buy it
- 4-5 rolls Ciabatta or Kaiser rolls toasted
- 1/2 cup olive oil
- 1 teaspoon rosemary
- 1 teaspoon dried basil
- 1 teaspoon garlic salt
Instructions
- In a plastic bag marinate the chicken breasts in the olive oil and spices. Be sure to cover evenly.
- On an oven safe grill pan, or skillet, grill the chicken on both sides till golden brown.
- Put into a 325 degree oven for 20 minutes until done (180 degree with a meat thermometer).
- Let stand for 5 minutes.
