Egg Whites with Hummus

I know I’m taking a pretty big risk by posting this egg whites with hummus recipe, but if you stick with me and try it I know you’ll be happy you did. Everyone is so into their scrambled eggs or egg whites for good protein in the morning but that gets so boring to me. I do love egg whites, they fill me up and keep me from wanting a snack 20 minutes later (hello, most cereals are totally that way). That’s why I started eating avocado egg whites, plus the avocado made it even more filling.

One day I was out of spinach for a smoothie, protein was gone as was our yogurt and granola, and the list goes on and on. We had just returned from a little weekend getaway and I needed to go grocery shopping. The only things that I could really do something with to avoid eating the cold cereal that just didn’t sound good at all was hummus and eggs. I figured if avocado works then maybe hummus would too. It’s so yum!!

I added a little hummus to the egg whites and then threw in a little season salt just to spice things up, and you know what? You cannot even tell it’s hummus. Actually, they almost taste like your normal, cheesy scrambled eggs without the cheese! Seriously, they are so soft and delicious! Serve with avocados and tomatoes and you’ve got yourself a high protein breakfast and it’s not just plain egg whites! Booyah!

Egg Whites with Hummus
Ingredients:
- 3 eggs, separated throwing out the yolks (or save them for lemon curd. YUM)
- 1/4 cup hummus
- 1/8 teaspoon season salt
- 1/2 avocado, chopped
- 1/3 cup grape tomatoes, chopped
Directions:
- In a small bowl, whisk together the egg whites, hummus, and season salt.
- In a nonstick skillet over medium heat add the eggs and allow to sit for about 15 seconds.
- Using a wooden spoon or spatula, stir the eggs continually.
- Remove from the stove once cooked and top with avocados and tomatoes.
Serve immediately
