Do you love peanut butter and chocolate as much as I do? I can’t stop eating it and now there’s a scotcheroos millionaire nuggets recipe!

As a food blogger I’ve quickly come to realize that there’s just nothing better than high quality, perfectly cooked good food. Other than an occasional hot fries and shake run to JCW’s we pretty much never eat fast food. Now, there are some places popping up that are totally fresh and use real ingredients but still manage to get the food to you quickly like The Wild Zucchini (where’s Marty?! His way was my favorite way!), but there are still a lot of places which I wont mention that we cannot eat at anymore. I know, I’m supposed to be talking about scotcheroos millionaire nuggets and I’m blabbing about burgers, but hear me out…
How Do You Store Scotcheroos Millionaire Nuggets?
Scotcheroos will keep for at least a week or longer, and are fine served at any time.
Keep the bars in an airtight container at room temperature.

I feel like junk food, fast food and even sugar are all in the same category. We crave them, love them and don’t want to give them up. And then we start eating better or at least with better ingredients and our palates start to change, or more importantly our bodies change. Have you noticed that? We eat pretty healthy around here other than a once a week dessert and splurges on the weekend. I used to miss the comfort foods but the longer I put good things into me the more my body hates the other stuff.

Really, it’s true. We had to stop at a fast food place on a long trip because it was the middle of nowhere, snacks had run out and our kids were needing a break. We ate what were better choices for that particular place, but by the time we got to my Mom and Dad’s we all had belly aches. We just aren’t use to all of that fat and grease. WHICH IS A SIGN, PEOPLE! If you go off of something and feel better then get sick when you have it again your body is trying to send a message.

And that’s when I hop back over to the recipe I’m posting which makes me a hypocrite. These are loaded with sugar, and there’s not an ounce of whole foods in it, but I can’t give them up. There’s something about Scotcheroos that just sucks me in. I love the Scotcheroos Peanut Butter Rice Krispy Treats recipe, I love the scotcheroos chex mix and now I love these mini scotcheroos bites. Dude, you can just pop them in your mouth! No plate necessary.
How Do You Prevent Scotcheroos From Going Hard?
When heating the syrup and sugar, avoid boiling, as it will become hard and make the scotcheroo hard to eat.
Can You Freeze Scotcheroos?
Food stays perpetually safe at 0 degrees Fahrenheit, according to the U.S. Department of Agriculture, because it is impossible for bacteria to grow at those temperatures.
But you should consume your scotcheroos within six weeks of placing them in the freezer for optimal taste.

I do a lot of baking from scratch, but have never made scotcheroos. Used your recipe to make these for our Halloween party last night and followed the recipe exactly as written. Ended up dumping the whole pan after my family did a taste test before the party. Everyone agreed these were nothing but a mouth full of sugar and tasted gross. Way too sweet.
I’m sorry you felt that way. We very much enjoy them, but everyone has different tastes and we understand that.
Last night, I thought I would try making these for Christmas; I followed every detail of the recipe and ended up dumping them in the trash. The instructions were vague and I am sorry for even trying this recipe. If you make them, you have been forewarned.

Great recipe ideas, I too love scotcharoos and saw you comment about not an ounce of whole food and tons of sugar. While I still use a lot of sugar I have altered my recipe removing the corn syrup and replacing with agave or honey, than you can cut the sugar. For the topping, I make homemade butterscotch and mix with melted milk chocolate chips

I got this similar recipe off the Special K cereal box in the 1960s during my early years of baking:
1 C sugar
1 C Light Kayro Syrup
1 C peanut butter
6 C Special K cereal
12 oz semi-sweet chocolate morsels
6 oz butterscotch flavored morsels
Same directions.
Over the years I adjusted the recipe…1/2 to 3/4 C sugar; 1 1/2 C (or more) peanut butter; 8 C cereal.
Tip#1: Melt the butterscotch almost entirely, then add the chocolate. The butterscotch takes much longer to melt.
Tip #2: Do not overcook nor use too high a temperature for either the base or the topping because the mixtures will crystalize.
a personal note….
I never heard of Scotcheroos until I moved to the “city” in the 70s, and the “city folk” I met hadn’t heard of Special K Bars. Over the years I wondered about the origin of this recipe. It occurs to me that there is no butterscotch in SCOTCHeroos. What’s up with that?
Often we skip the butterscotch as I love milk chocolate instead, but this recipe does use the butterscotch. I’ll have to try special k bars! I’m so excited!

Love the “Scotcheroo Balls” idea! Scotcheroos have been a favorite in our family for as long as I can remember! However. I noticed a difference in our recipes. Ours calls for 6 cups of Rice Krispies vs. your 3 cups. Thoughts? Is this something you changed along the way? Reasons? I think I have a recipe cut off the box….so that’s why I’m asking you! Notice less volume height wise…. Love your website and ideas! Also love your take on eating healthier. So true….crave that healthy food the more you eat it. People will feel better eating healthier. There’s the catch!!! Thank you!
Ooops! The 3 is an error, but we do only use 4 cups as we like the peanut butter to be stronger and the balls to stick together easier. 🙂
We have always used 6 cups also, and I believe that is what the original recipe calls for (in fact, have been making these since the 60’s when I was still a young girl). The original comes from the companies involved – Rice Krispies, Karo Syrup, and the Peanut butter (can’t remember which company, but we have always used Jif). I think more Rice Krispies might “dull” the overly sugary taste for some people, although everyone I have ever fed these to says they are very addicting! Topping is always 1 cup Nestles Chocolate Chips with 1 cup Nestles Butterscotch morsels (No other butterscotch chip melts the same). Or, you can sprinkle both types chips over the bars, put in oven for a few minutes. then swirl them around with a knife to give a marbelized look. By the way – if you love peanut butter, just add ¼ cup to ½ cup more peanut butter. And cook the Karo/sugar mixture until it bubbles and they will firm up a little better. I always cook mine in the microwave in a very large measuring cup (2 quart). And to make cleanup easier, grease or oil the bowls you use and the mixture will slide right out.
