Need a quick and Simple Vegetable Side Dish?  This is such a simple, but delicious way to make veggies. I know it doesn’t look like much, but it’s really so yummy!! I think it’s hard to think up sides and sometimes I want veggies fast and easy for the side instead of worrying about following a big recipe. Don’t you? We had this two months ago for the first time and I love it. The best part is you can use whatever veggies are in your house. Try onions, carrots, peppers, beans etc. I know there aren’t measurements, but don’t freak out. You can just play with it. You’ll be just fine.

What Vitamins Are In Broccoli?

Broccoli is packed with vitamins and minerals and is a good source of Vitamin E, Vitamin C, Vitamin K, Vitamin A, and B6.

Broccoli is also high in calcium, iron, magnesium, phosphorus and selenium and is a very good source of dietary fiber, folate, potassium and manganese.

Do Carrots Help You See?

Carrots contain vitamin A, or retinol, and this is required to enable your eyes to see in low light conditions.

The nutrients and vitamins found in carrots are extremely helpful for boosting eye health and maintaining good eyesight.

Can You Roast Beets?

Yes, you can roast beets with their skin on or after peeling.

Toss them with a little olive oil and roast for 35-40 minutes.

Beets can also be eaten raw.

Ingredients 

Instructions 

  • Place veggies in a pan over med heat.
    Veggies of choice
  • Cover in drizzles of olive oil and sprinkle the rest of the ingredients.
    Olive Oil, Italian Seasoning, Garlic, Salt, Pepper, Sugar
  • Let cook until everything is tender.

    It sounds good. My usual method of doing veggies to blanch in boiling water, put into ice-water to stop cooking, and serve with shallots, garlic…whatever suits the veggie…yours sounds so nice and simple!
