This is a whim recipe. The photos are not perfect and there aren’t very many but I wanted it in its own post so you could pull it up at anytime for any dish. It’s a super simple recipe for the avocado enchilada sauce. You can dip taquitos or flautas in it, use it on enchiladas or a burrito, or heck turn it into a dressing on a sweet pork salad!
The flavor is fantastic. There’s a slight kick from the verde sauce but a fantastic creaminess from the avocados and of course the cilantro and lime juice brighten the whole thing up!
Can I Substitute Avocado for Oil in Baking?
You can usually just swap 1 cup of butter or oil for 1 cup of avocado.
You can also substitute avocado for eggs.
It takes 2 tablespoons to 1/4 cup mashed avocado for 1 egg.
How Long Will Enchiladas Keep?
Cool, cover and refrigerate enchiladas for 2-3 days.
Or, you can wrap tightly and freeze cooked enchiladas for up to 3 months.
Are Avocados Good for You?
Avocados offer nearly 20 vitamins and minerals in every serving.
They contain potassium which helps control blood pressure, lutein which is good for your eyes, and folate, a crucial nutrient when pregnant.
Avocados are also a good source of fiber and they are low in sugar.

Ingredients
- 2 Ripe Avocados, pitted and peeled
- 15 ounce can Green Enchilada Sauce
- 1/3 Cup Cilantro, chopped
- 1 Lime, juiced
Instructions
- In a blender, add the sauce, avocados, cilantro and lime juice, blend until smooth.
- Store for up to 3 days in an airtight jar.
- Serves well with all Mexican food!
