I love summer! Being warm in the sun and sitting by the pool while the kids play is my happy place (I’m writing this post in the middle of winter so it sounds especially lovely right now!)! I love busting out the grill to make our grilled flank steak or mango salsa grilled chicken. And I love allllllll the summer produce. Fresh tomatoes from the garden (hello, tomato cucumber salad!!) or raspberries straight from the raspberry bush…there’s just nothing better!

All that being said, I’m always trying to find new ways to use that tasty summer harvest. These cheesy corn fritters are my latest obsession for using fresh corn on the cob. Extra bonus…Cade and kids gobbled them up too! We have been eating them as a side dish with all our summer dinner recipes.

Ingredients for Cheesy Corn Fritters

You only need a few household ingredients to make these tasty corn fritters! You won’t believe how quickly they come together. Here is everything you will need:

  • Eggs: bind all the ingredients together
  • Milk: adds richness and helps form the batter
  • Salt: adds flavor
  • Cayenne Powder: adds heat and flavor
  • Flour: just regular all purpose flour
  • Cornmeal: adds corn flavor and helps bind everything together
  • Sugar: adds flavor
  • Baking Powder: gives the fritters a little fluffiness
  • Corn Kernels: adds texture and real corn flavor to the fritters
  • Scallions: adds flavor and freshness
  • Triple Cheddar Cheese Blend: You could honestly use any cheese you want, but Tillamook’s cheddar cheese blend is our favorite. It adds flavor and that melty gooiness.
  • Oil: used for frying the fritters – canola oil or vegetable oil

How to Make Corn Fritters with Cheese

Now that you’ve watched how this corn fritter recipe is made, let me write out the steps for you. These step-by-step instructions will walk you through how to make these tasty fritters that are perfect for an appetizer or as a side dish. Here are the basic steps:

  1. Whisk: Combine the eggs, milk, salt and ground cayenne powder in a large bowl and whisk everything together.
  2. Combine: Add the flour, cornmeal, sugar and baking powder and whisk to combine.
  3. Stir: Add the corn, scallions and cheese and stir until combined. It will be quite thick as you can see in the photo below.
  4. Prep: Place a cast iron skillet on the stovetop over medium-low heat and add enough oil to generously coat the bottom of the skillet.
  5. Fry: When the oil is shimmering, add a large spoonful of batter into the skillet and flatten slightly with the back of a spoon into a disc shape. Repeat until you have 3-4 fritters frying in the pan. Let them pan fry on each side until golden brown.
  6. Repeat: Remove the cooked fritters from the skillet and place them on a baking sheet lined with paper towels. Repeat these steps with the remaining corn fritter batter in batches. Add more oil as needed.
  7. Serve: Serve the fritters warm or at room temperature with dip if desired.

What to Dip Corn Fritters In

We like to make a simple dip with sour cream, chili powder and a little lime juice. It adds a little flavor and creaminess but still lets the flavor of the corn fritters shine. They are also great with ranch or a dollop of sour cream or plain Greek yogurt sprinkled with green onions. One of my kiddos may or may not eat them with ketchup.

What Type of Corn is Best?

If you can get your hands on fresh corn, then definitely use fresh. Corn cut off the cob is so dang good! The flavor and texture just can’t be replicated! If you don’t have fresh corn, then frozen is the next best thing. Let it thaw completely before using in the recipe.

Definitely do not use canned corn. It is too mushy and won’t hold up well in the fritters.

What is the Difference Between Hush Puppies and Corn Fritters?

While both hush puppies and corn fritters are made from a corn batter and fried, they are different in shape and the type of batter. Hush puppies are round in shape and corn fritters are disk shaped. Hush puppies are made with a cornmeal base and corn fritters use a flour based batter. They also differ in texture, corn fritters being light and fluffy and hush puppies being more dense.

Storing and Reheating

Leftover corn fritters should be stored in an airtight container in the fridge. They will keep for up to 5 days. They also freeze extremely well! Let them cool completely and then place in a ziploc bag. They will keep in the freezer for up to 3 months.

Corn fritters can be reheated in the microwave, on the stove top, or in an air fryer. If you want to keep that crispiness on the outside, I highly recommend the stove top or the air fryer. For the air fryer, preheat it to 400 degrees F and then air fry for about 5 minutes.

Ingredients 

  • 2 Eggs, large
  • 2/3 Cup Milk
  • 1 ½ teaspoons Salt
  • 1/8 teaspoon Cayenne Powder
  • 1 Cup Flour
  • 1/2 Cup Cornmeal
  • 1 Tablespoon Sugar
  • 2 teaspoons Baking Powder
  • 3 Cups Corn Kernels, fresh or thawed from frozen
  • 2 Tablespoons Scallions, chopped
  • 1 Cup Triple Cheddar Cheese Blend, colby jack cheese shredded
  • 1/4 Cup Oil, or more

Instructions 

  • In a large bowl, whisk together the eggs, milk, salt and ground cayenne.
    2 Eggs, 2/3 Cup Milk, 1 ½ teaspoons Salt, 1/8 teaspoon Cayenne Powder
  • Whisk in the flour, cornmeal. sugar and baking powder until just combined.
    1 Cup Flour, 1/2 Cup Cornmeal, 1 Tablespoon Sugar, 2 teaspoons Baking Powder
  • Stir in the corn, scallions and cheese.
    3 Cups Corn Kernels, 2 Tablespoons Scallions, 1 Cup Triple Cheddar Cheese Blend
  • Heat a cast-iron skillet over medium-low and add enough oil to generously coat the bottom of the skillet, about 1/4 cup.
    1/4 Cup Oil
  • Once the oil is shimmering hot, add a heaping tablespoon of the batter to the skillet. Using the back of the spoon, flatten it into a round patty. Repeat until you have 3 to 4 fritters in the pan.
  • Fry on each side until golden, about 2 minutes, then cook for an additional 2 minutes. Adding more oil as needed.
  • Remove from the skillet and transfer to a paper towel-lined baking sheet. Repeat until you have used all the batter. Serve warm or at room temperature.
