My friend Kara makes this scrumptious cinnamon lemon poppy seed bundt cake and I cannot get enough. I never would have thought to add cinnamon sugar to a lemon dessert but it’s incredible! Only recently did Kara tell me that it actually was supposed to be a vanilla bundt cake but years ago she didn’t notice and made lemon and has never gone back. 

Oh you’ve got to eat it warm, fresh out of the oven or room temp with a dollop of whipped cream on the side. I bet you could even add berries!

How Do I Make Cinnamon Lemon Poppy Seed Bundt Cake?

I mentioned that you only need 7 ingredients to make this fabulous bundt cake. You start by preheating the oven to 375º F and then mixing together a lemon cake mix and a package of instant lemon pudding. Then you add the remaining ingredients (eggs, water, oil, and poppy seeds) and combine everything together until just mixed. Try not to overmix it. Overmixing causes cakes to be dense and gummy. Gross!

How to Prepare a Bundt Pan

Prepare the bundt pan by spraying it with cooking spray and sprinkle half of the cinnamon sugar in the bottom of the pan. Pour in half of the cake batter and then sprinkle in the remaining cinnamon sugar on top of the batter. Add the remaining cake batter and stick it into the oven to bake for 35-40 minutes.

Why Do You Add Pudding to Cake Batter?

Adding pudding to cake batter makes the cake extra moist. Because pudding mixes have gelatinous features, it adds to the structure and substance of the cake while maintaining it’s light, fluffy texture. For this delicious bundt cake recipe, adding the lemon pudding packet gives the cake an extra burst of lemon flavor.

How Do I Get Bundt Cake to Come Out Cleanly?

There are lots of methods for greasing a bundt pan out there, but we have found that thoroughly spraying every nook and cranny of a bundt pan works the best.

Can I Make this into Mini Bundt Cakes?

This recipe makes great mini bundt cakes! Follow the same instructions but decrease the baking time to 18-22 minutes. Be sure to evenly distribute the cinnamon sugar across all the mini bundt pan cavities. For the mini bundt pan, this is our favorite. For a full size bundt pan, we like this one. Can this Cake be Frozen?

Yes! Let the cake cool completely and then wrap it in plastic wrap. From there you can put it in a freezer bag or wrap it in aluminum foil. Cinnamon lemon poppy seed bundt cake will be good in the freezer for up to 3 months. When you’re ready to eat it, allow it to come to room temperature before serving.

Description

Ingredients 

  • 1 Cake mix, lemon
  • 3 ounce Lemon Pudding, Instant
  • 4 Eggs, large
  • 1 Cup Water
  • 1/2 Cup Oil
  • 2 Tablespoons Poppy Seeds
  • 3 Tablespoons Cinnamon Sugar

Instructions

  • Heat the oven to 375 and spray a bundt pan with nonstick spray. Sprinkle in half of the cinnamon sugar and set aside.
  • In a bowl, stir together the cake mix and pudding mix.
  • Add the remaining ingredients and stir to combine.
  • Pour half of the cake batter into the pan and sprinkle in the remaining cinnamon sugar.
  • Add the rest of the batter and bake at 375 for 35-40 minutes.
  • Remove from the oven to cool then turn out on a cake stand and enjoy!

Notes

Bundt cake can be frozen for up to 3 months.
