Easiest Shredded Chicken Burrito
I personally think that if you’re going to get a rotisserie chicken it should be from Costco, but we have a local store here that does a killer job too. The problem is, you don’t always want the chicken for dinner, but you want a rotisserie chicken recipe idea instead and these Smothered Honey Lime Chicken Burritos are the bee’s knees.
I still totally don’t get the point of that saying, but we are running with it.
Speaking of sayings, that’s something all of our friends like to tease me about. I love to pull out the oldies or make up my own like, biggest duck on the pond, pickin’ up what you’re puttin’ down, and so on. Got any good ones for me?

What’s Needed for Shredded Chicken Burritos?
To make these honey lime smothered burritos, you’ll need:
- Fresh flour tortillas
- Rotisserie chicken
- Lime juice
- Honey
- Garlic
- Chili powder
- Cilantro lime rice
- Shredded cheese
- Pinto beans
- Pico de gallo
- Cilantro
- Salsa verde
- Heavy cream

How to Make Smothered Chicken Burritos
Okay, let’s break this down. The honey lime chicken is made up of rotisserie chicken (or you can cook a couple of chicken breasts if you prefer). Whisk up lime juice, honey, garlic and chili powder and toss it with the chicken to marinate for no more than 30 minutes. After that, the lime juice starts to overpower everything.
We also added our famous cilantro lime rice, which is a cinch to make and adds more substance to the burrito. You don’t have to add anything other than meat if that’s what you prefer. If you’re using a rice cooker like ours, you can actually make the rice ahead of time and leave it on the counter. The Hamilton Beach rice cooker will keep it warm.
Pinto beans are next as we like the mild flavor and texture with a lighter chicken dish. Finally, throw in some cheese and then top everything off with a creamy salsa verde sauce just like what’s used in our Honey Lime Chicken Enchiladas recipe and of course, add more cheese before sticking it under the broiler.

Can You Freeze Chicken Burritos?
You can freeze chicken burritos, but make sure you don’t add any sauce on top until they’ve been reheated and are ready to serve since a cream sauce will not freeze well and it would make it difficult to wrap and freeze without creating a mess.
How to Freeze Burritos
Burritos can be frozen if you do not add sauce. Wrap the burritos individually in plastic wrap and foil, then place in freezer bags.
How Long Can You Freeze Burritos?
You can freeze homemade burritos for up to 3 months if you stored them properly. We prefer to use our Food Saver.
How to Reheat Frozen Burritos
To reheat freezer burritos, bake on a cookie sheet or pan at 350 degrees F for 15 minutes, or until cooked through.

Can I freeze the sauce separately from the frozen burritos and then assemble before baking?
Hi Lizz! Unfortunately, the sauce does not freeze well, but since it’s only two ingredients, it comes together really quickly!
I made this Monday. While it was a bit to get together (and I am not a cook!), once it was all done, it’s so dang good! The honey flavor of the chicken, the rice, the sauce on top. This will go into the rotation!
