Oh, what?! You haven’t ever ventured away from the salad to try the sweet pork quesadilla? Guys, it is not childish to order a quesadilla. Especially this one. And now you can make it at home with this Cafe Rio copycat sweet pork quesadilla recipe!! There are a few secrets that make it just like the real thing. You MUST do each one.

Second, only use fresh tortillas. Make your own, or buy some at the store. Tortilla Land makes a good uncooked tortilla. (Psst! Without even noticing until I was editing photos, I totally shot this recipe with parsley and not cilantro! Did you catch the mistake?)

Third, BUTTER. Are we really all that surprised? Butter and I are best friends. It makes everything better. It’s even in our pizza sauce that is one of our top recipes on the site. Seriously though, butter the pan after cooking the tortillas and then cook up the quesadillas. It totally makes such a big difference!

 

What is a Quesadilla?

Quesadilla is a Mexican dish, consisting of a tortilla that is filled with cheese or sometimes meat and then grilled.

 

Can Quesadillas be Made With Corn or Flour Tortillas?

Both corn and flour tortilla make tasty quesadillas.

If you are adding more than just cheese, flour tortillas are recommended because they are more durable and hold more ingredients than corn tortillas.

 

Is Pork Considered White Meat?

Pork is classified as a red meat.

When fresh pork is cooked, it becomes lighter in color, but it is still a red meat.

 

Cafe Rio Copycat Sweet Pork Quesadilla

Cafe Rio Copycat Sweet Pork Quesadilla

Ingredients:

  • Sweet Pork (click for the recipe)
  • 6-8 Fresh, Uncooked Tortillas
  • 1 Tablespoon Butter
  • Pre Shredded Mexican or Cheddar Cheese (We use sharp or mild)

Directions:

  1. Heat a griddle to medium heat.
  2. Cook the tortillas then remove to a plate.
  3. Stab the butter with a fork and push it all over the griddle. Do not over butter the pan!
  4. Quickly place a tortilla down with cheese and pork, fold over the tortilla and then flip to the other side to evenly brown the tortilla and melt the cheese.

Serve immediately.
