The most popular recipes in 2020 have been quick bread recipes like this easy Snickerdoodle Bread. A light and tender bread with cinnamon ripples!

Is Quick Bread Really Cake?

Shhhh, we all know that a quick bread is pretty much a cake in a loaf form, but calling it a quick bread always makes me feel better. Like, “ohhhh just having a slice of bread with dinner” sounds way better than, “ohhh just having a slice of cake with dinner.”

Don’t worry, I’m not going to tell a soul. It’s our little secret.

And if you’re thinking how similar this cinnamon bread is to a snickerdoodle, well come on, of course it is, but remember, IT’S BREAD. 😉

Amish Cinnamon Bread

I grew up with banana bread and an amish friendship bread my mother would make. Actually, you might know it as an Amish Cinnamon Bread. I love Amish bread. It’s one of the best things ever and I’d love to one day visit a place where I could actually try an authentic Amish bread.

If you’re interested I’d love to share the Amish Friendship bread recipe. I really think it would be a beautiful way to step out of the darkness of Corona and into the light of the friendships we’ve longed to embrace once again. I’d love to hear your thoughts.

Can you Make Cinnamon Bread into Muffins?

Our kids love to make this bread into muffins for breakfast and I’m all about that. Here’s how to make cinnamon muffins from scratch.

  1. Prepare the batter as the instructions state.
  2. Spray a muffin tin with nonstick spray and spoon a little batter in each well.
  3. Sprinkle the cinnamon sugar and top with more batter.
  4. Gently swirl the mixture using a toothpick and top with remaining cinnamon sugar.
  5. Bake at 350 for 20-30 minutes.

Gluten Free Snickerdoodle Bread

I have yet to make a perfect gluten free quick bread on my own, but I found a really delicious recipe over at Kim’s Cravings for Gluten Free Snickerdoodle Bread.

Two slices of snickerdoodle bread stacked on top of each other. There is more bread in the background.

Look, I joked in the beginning about quick bread and cake, it stems from the Costco muffins. I’ve not been able to wrap my head around those muffins. They have got to be cupcakes, right?! Ugh, let me set the record straight.

LOVED! Made this afternoon and instead of the cinnamon sugar spice, I used a homemade chai spice that I love from another recipe I have. Maybe best bake I’ve ever made! This cake is moist (that buttermilk and oil!), but not heavy, right amount of crumble, not too sweet, perfect by itself with no drink, or in a toaster oven with some butter. Only thing I want different is a stronger crunch to the top…figure that out and this is a 10/10! Thank you

  2. Jane says:

You talk about cinnamon sugar but you never mentioned how much cinnamon. Do you mix cinnamon with the cup of sugar or is that separate? please let me know. Sure sounds like a great recipe

    1. Sweet Basil says:

Hey Jane! I make my own cinnamon and sugar. I like mine extra cinnamon-y. The most common ratio I’ve seen is 1/4 cup of sugar and 1 Tablespoon of cinnamon. I usually add another half tablespoon or so of cinnamon. It all depends on how you like it! Enjoy!

Hi, I do not understand this recipe. Please tell me how much sugar do you add to the batter and how much cinnamon. Also, how much cinnamon sugar is between the layers. Maybe I missed something, but I would like to make this bread. Thanks, Stef

    1. Sweet Basil says:

Darnit! It’s 1 cup of sugar to add to the batter. I’ll get that fixed immediately. For the cinnamon and sugar, you pour 1/3 of the batter then 1/3 of the cinnamon and sugar, then another 1/3 of the batter then another 1/3 of the cinnamon and sugar. Then you swirl the batter with a knife. Add the last 1/3 of the batter and sprinkle the last 1/3 of the cinnamon and sugar on the top. Hope that make sense! Enjoy!

Also curious about the reference to adding sugar, but no sugar in the ingredients list.

      1. Sweet Basil says:

It’s 1 cup of sugar in the batter. Fixing the recipe card now!

    2. Sweet Basil says:

Ack!! It’s 1 cup of sugar. I’ll get that fixed right away. Thank you!
