I have been making different versions of taco pie since 2008, but this one is the last I’ll ever make, it’s perfection in a pie crust! I recently threw it together for my hungry family and it became an instant hit.

Variations:
This is a perfect recipe to adapt to use whatever ingredients you have in the fridge and pantry, to fit your family and budget needs!
- Protein: Swap the ground beef for ground chicken, turkey or any other leftover cooked meats like chicken or pork.
- Vegetarian: Omit the meat and add another can of beans and additional veggies like spinach, sautéed zucchini, and mushrooms to make it meatless!
- Beans: Not into beans or prefer a different kind? You can omit or substitute!
- Taco Seasoning: my homemade taco seasoning uses simple pantry ingredients and is way better than store-bought!

Going to make this week but step 3 is pretty confusing. Can you help? It sounds like you put parchment paper inside the crust and then the beans on top? That doesn’t make any sense to me. Can you explain this step? Also why poke holes in the bottom? I appreciate it!
Hi Abby! Sorry for the confusion! This step is describing blind baking the crust. So you dock the crust by poking holes in the crust to allow steam to escape as it bakes. You place parchment in the crust and then fill the crust with baking beans and bake the crust. The baking beans help the crust keep it’s shape and not shrink. When the crust is done baking, you remove the baking beans and parchment and fill with the taco filling. I hope this helps!

Baking beans are like baking weights. Or you cand use any dry beans to help the pie crust keep its shape as it bakes.
