I’ve never been to Greece, but I picture it to be perfection. I don’t eat seafood much, so that part may be difficult. I just keep picturing a beautiful, light and breezy room that looks out over the most serene water with a stunning sunset and relaxation all around. My goodness we want to visit. I wish someone would just plan a trip for us. Tell us where to go, what to see and especially what to eat. I’m bound and determined to make it happen. It’s a dream I can’t let go of. In the meantime I’ll keep making these healthy Greek turkey tostadas with lemon tzatziki sauce. Yes, a lemon version.
This was one of those lame meals, or so I thought while making it. We had tomatoes, olives, 1/2 a cucumber, a little lemon greek yogurt and leftover turkey that desperately needed to be used and I couldn’t think up anything. I didn’t want to waste all of that good food, but we were headed out on a media trip the next day so I really had no choice, but to make something happen.
We started by making a tomato, olive and cucumber salsa which we set aside to hang out in the fridge and get all chilly. By now I was thinking salad or something Greek so when I grabbed the lemon yogurt I started to play around with it as a sauce and a little dill totally turned it into the perfect tzatziki. All that we had left was cooking up some corn tortillas in olive oil (you could use coconut oil) and layering everything with a little feta. BAM! Dinner was awesome. Cade loved it. The girls actually ate it without any prompting and we used up everything! Now to just get the real thing one day…

You will need to bake or fry the tortillas to make them crisp.
Then add the toppings of your choice.
What Cheese Can You Substitute for Feta Cheese?
There are 4 cheeses with similar texture and flavor that could be substituted for Feta cheese.
They are, Ricotta, Halloumi (Greek), Queso Fresco (Mexican), and Goat-sheep mix.
Tofu may also be substituted.
What is the Difference Between Greek Yogurt and Regular?
Greek yogurt is strained 3 times so that most of the liquid is removed.
That is why Greek yogurt is thicker and has a stronger flavor.
Because it is more concentrated, it has more protein.
