We’ve talked about this a few times, lunchtime is the worst. THE WORST. Everything takes too long to make unless it’s not good for you and you’re just trying to take care of yourself and live your life to the fullest so how is it that a meal can be such a hassle? I love this delicious Pot Roast Sandwich, but food should never make you feel bad, it should be the opposite and I’m pretty darn sure these Honey Avocado Turkey Bacon Sandwiches are going to change your life.

What are you currently eating for lunch these days?

Right now I’m usually a green smoothie protein shake, oatmeal with fruit, turkey with apples and cheese, or leftovers. Yes, leftovers, someone’s got to eat them and at least I don’t have to think. Anything else feels like a hassle or it’s not very good for me and after my battle with Hyperemesis I have such a conviction for healthy eating and trying to take care of our bodies because no matter how much we want to believe otherwise, they aren’t going to last forever.

Less than 100 Calories

A few weeks ago I found these Flatout Flatbreads and couldn’t wait to give them a try seeing as how they are only 90 calories!

I’ve tried using wraps before but they were a bit like cardboard and way, way too big which means you end up taking in far more calories and carbs than you had planned because heaven knows we have to fill things to the top,  huh.

These are so different and work great for a honey avocado turkey bacon sandwich as they have a unique shape that allows them to easily be folded without breaking at all. And at only 90 calories you can eat the whole thing and still feel light and good. Best of all, this is the kind of meal prep recipe for lunch that you need.

Honey Avocado Dressing

My friend Jeana taught me how to make this honey avocado dressing for sandwiches and it’s pretty wonderful, along with much healthier than a slather of other condiments you could use.

It’s a simple recipe, avocado, lemon juice, garlic, honey and while we use vegenaise, mostly because of it’s flavor but it is a healthier option, you could use mayonnaise for sure. We blend it all in a blender until smooth and that’s it!

How Long will Homemade Dressing Last in the Fridge?

Avocado dressing or any homemade dressing will keep in the fridge for up to 2 weeks, but you will need to give it a little store every few days.

Meal Prep for Lunch

It doesn’t have to be that way. Make the dressing at the beginning of the week along with a couple of pieces of bacon or turkey bacon. Slice up your favorite veggies and then lunch becomes merely a quick assembly which you deserve. Ingredients 

Avocado Dressing

  • 1/2 Avocado, chopped
  • Juice of one lemon
  • 2 Teaspoons Garlic, minced
  • 2 Tablespoons Honey
  • 2 Tablespoons Vegenaise
  • Pinch Salt

For the Sandwich

Instructions

  • Throw all of the ingredients in a blender and blend until smooth and no chunks remain.
  • Spread a little of the dressing on the flatbread and pile it high with ingredients!

Notes

Left overs should be stored in the refrigerator.
