Memories from 2011
I was looking back through old posts and this one pulled at my heart strings a bit. Here’s what I said waaaay back in 2011. I can’t believe it has been 10 years!
“This is a little holiday treat that we made growing up, White Chocolate Peanut Butter Crackers.
New Years Eve would roll around and we would usually play games with the Glem family and eat all night long. The games usually consisted of Huggermugger, Nertz, Farkle, etc. and us little kids would run wild until midnight when we would bang pots and pans outside. Oh, the neighbors must have hated us.
Peggy Glem, the mom and my mother’s dearest friend passed away December 18th and it was quite sudden. Mom is taking it a day at a time, but is going to miss this friend whom she loved as a sister. We are so grateful for Peggy, her influence and mostly for being our mom’s bestest friend. As my mom put it, “making her journey here on earth all that it could be.”
Treats during the holidays usually consisted of peanut butter and coconut balls, chocolate pizza, oreos and peanut crackers dipped in chocolate, Peggy’s Artichoke dip (it’s amazing), her cheese ball (I must get the recipe) and various other snacks like crackers and cheese, meats, veggies etc. I kinda miss the old days.
This was something quick and easy that us kids could make that afternoon, but rarely were there any left by that evening.
They are Ritz crackers, smothered with peanut butter, topped with another cracker and coated in white almond bark. It doesn’t sound all too exciting, I know, but they are a yummy little treat. ”
I can’t even believe that so much time has passed. I wonder what she would say about how much our world has changed.
Ingredients Needed for Peanut Butter Crackers
It doesn’t get much easier than this…
- Ritz Crackers
- Peanut Butter (creamy)
- White Almond Bark
- Sprinkles (optional)
We don’t even have measurements for these because you can make as much or as little as you want.
Is White Chocolate Really Chocolate?
White chocolate is made with a blend of sugar, cocoa butter, milk products, and vanilla.
White chocolate is technically not really chocolate, because it contains no chocolate solids.
It also tastes different than chocolate.
How to Make Peanut Butter Filled Ritz Crackers
You can use crunchy or creamy peanut butter, but our kids for sure prefer creamy. It’s a swipe of a knife over a cracker half, top it with the other and then I prefer to chill them in the fridge for 10 minutes, or up to 3 hours.
After allowing the peanut butter to firm up, just melt down white almond bark and using a fork, lower the cracker sandwiches in. Flip once and then lift and gently tap until the excess chocolate is gone.
Set them on wax paper to cool and harden. You can out them into the refrigerator to speed up the process. Top with sprinkles if you want.
Adding Sprinkles!
Make sure you come prepared with your favorite holiday sprinkles so that you can fancify your crackers. Kids love to do this part and anything goes!
How to Store White Chocolate Peanut Butter Crackers
Allow the crackers to rest in a very cool place or the fridge. Once the chocolate has set just pile into a food storage container.
I mean, it’s not like they are fancy, but who can resist crackers and peanut butter? Especially with chocolate! And if you aren’t a white chocolate fan, you can absolutely use any chocolate you want.

Instructions
- Spread peanut butter over Ritz crackers and top with another cracker.
- Drop into the melted almond bark and flip over to coat the other side.

What’s almond bark can I just use white chocolate chips flavor with almond extract ?
Sweet Basil
Almond bark is similar to chocolate except that it is made with vegetable fats instead of cocoa butter. You can definitely use white chocolate instead.

I make these at Christmas because my mother made them for our family. They taste like Clark bars (which are hard to find these days). So yummy and fun to make with the kids!
Sweet Basil
I loved Clark bars growing up!! This is just the best combination of flavors!

One question though – I am in Australia – where do you get the white almond bark??
