This breakfast fruit and yogurt pizza has become one of our all time favorite recipes. Easy, crunchy granola, creamy mixed berry “sauce” and fruit!
This recipe was 100% for me, but Cade and the kids ended up absolutely loving it! Breakfast fruit pizza is kind of the best thing ever and you should totally bust it out in your own kitchen.
It starts out by using our killer granola recipe but without the egg white. Having the granola thick eliminates the need for the egg white which usually helps to create those big clusters. You can leave out the nuts or change them to any nut you like.
Then there’s the lovely “sauce” which is whipped berry cream cheese, yogurt, lemon zest and a touch of lemon juice which really adds a nice freshness to the sauce. You can skip it and it will still be good, but try it again after adding it and you’ll agree that it takes everything to a new level.
The fruit is up to you. We went with what we had, but plums, peaches, oranges, bananas, and on and on would be wonderful! I wouldn’t assemble this breakfast fruit and yogurt pizza more than a day ahead but it certainly lasts through the night for breakfast or you can have it all ready to go and assemble it when you’re ready to eat. In fact, we even have it for summer dessert sometimes!
