I wasn’t kidding when I said I had a few recipes using that cilantro pesto for you. Asparagus is totally in season in March and so it’s the best time to test out those recipes. We personally love our regular pesto quinoa with asparagus but this cilantro pesto asparagus makes a great side instead of main dish.

My mom hated asparagus until Cade made it for her a few years ago. She always claimed it was a nasty weed she didn’t want to make or eat, but not only did Cade sell her on it (she now makes it at home too!) but years ago he sold me on it too. It’s all about the proper cooking which in our house means grilling or sauteing. No matter how it’s cooked we love it but especially those two ways. In fact, if you’ve got a hater you’ll find this will convince them to eat it too!

 

Can Pesto Be Frozen?

Pesto freezes well.

Freeze in ice cube trays, and then store frozen pesto cubes in plastic freezer bags in freezer for up to 6 months.

Pesto may also be frozen in small jars or plastic containers for up to 9-12 months.

 

Where Does Asparagus Grow?

Asparagus should be grown in a dedicated space where it can come back year after year.

Once established it will come back for 20 to 30 years.

 

Can Asparagus be Grown in Containers?

It is always best to grow asparagus in the ground.

But, if need be, it can be grown in containers.

Asparagus can be grown in large pots or patio bags for a limited time.

Asparagus is a nutritious addition to any diet.

It is low in calories and a great source of nutrients, including fiber, folate and vitamins A, C and K.

Ingredients

  • 1 Recipe Cilantro Pesto
  • 1 Bundle Asparagus Trimmed (See This Post for the proper method)
  • Olive Oil
  • Sea Salt
  • Pepper
  • Lemon ZEST of 1 Lemon
  • Parmesan Cheese for garnish

Instructions

Prepare the pesto recipe.

  1. In a grill pan, saute pan or a gas grill over medium heat add a drizzle of olive oil (for the grill toss the asparagus and seasonings in a pan first).
  2. Prepare the asparagus as per the link above.
  3. Add to the pan and season with salt and pepper.
  4. Cook until tender about 3-5 minutes.
  5. Remove to a plate and spoon the pesto over the top.
  6. Garnish with lemon zest and cheese!
