I’ve posted a few recipes here and there for Cafe Rio Sweet Pork, Cafe Rio Cilantro Lime Rice, Cafe Rio Chicken and of course the famous Cafe Rio Tomatillo Ranch, but this Smothered Cafe Rio Chicken Burrito is like all of that (almost) awesomeness all slammed into one.

We love using all of those different recipes to make a big salad, you know the tortilla on the bottom, everything inside and piled with lettuce on top? Except, it’s kind of a lot of stuff. I mean, you’ve got to get the salad, the little tortilla strips, the salsa, the guac, and so on. It’s a darn big salad! An trust me, I looooooove salad, but I also don’t want hours of prep work and grocery shopping to make it happen.

So sometimes we just use the ingredients to make burritos, yes even the ranch as the smother sauce. And it’s good. It’s real good.

What is The Difference Between a Burrito and Enchilada?

One of the main differences is the type of tortilla that is used.

Both enchiladas and burritos are filled with a variety of meat, beans, and rice.

Enchiladas are usually made with corn tortillas.

Enchiladas are served on a bed of sauce and sprinkled with cheese.

Flour tortillas are used to make burritos.

Burritos are usually served with sauce on the side.

Can Burritos Be Frozen?

Burritos can be made ahead and frozen.

Each burrito should be wrapped in foil and then place them in a freezer bag.

To reheat: place in 350 degree oven for 30-40 minutes in foil OR remove foil and heat on HIGH in microwave for about 1 minute.

Can Burritos Be Eaten Cold?

Burritos are usually eaten hot, but even cold, they can be tasty and perfectly safe.

Smothered Cafe Rio Chicken Burrito

Ingredients 

  • 6-8 Fresh Tortillas

Cafe Rio Ranch

  • [Cafe Rio Chicken]
  • 1 Jalapeno
  • 1 Clove Garlic
  • 1 Tomatillo
  • 1 Handful Cilantro
  • 1 Lime , juiced
  • 1 Cup Milk
  • 1 Package Hidden Valley Ranch, dry mix
  • 1 Cup Mayonnaise
  • [Cafe Rio Rice]
  • Black Beans, warmed
  • Colby Jack Cheese, grated

Instructions 

  • Cook the chicken per instructions as well as the rice and prepare the ranch.

For the ranch

  • Place all ingredients except the mayonnaise in a blender and blend until smooth.
    1 Jalapeno, 1 Clove Garlic, 1 Tomatillo, 1 Handful Cilantro, 1 Lime , 1 Cup Milk, 1 Package Hidden Valley Ranch
  • Whisk in the mayonnaise and store in the fridge in an airtight jar.
    1 Cup Mayonnaise
  • Warm the tortillas and heat the oven to broil.
    6-8 Fresh Tortillas
  • Place rice, beans, and chicken on the tortilla, fold in the ends and roll closed.
    [Cafe Rio Rice], Black Beans
  • Repeat with remaining tortillas.
  • Top with ranch and cheese and place under the broiler until melted.
    Colby Jack Cheese
  • Serve immediately.

      Thanks so much Ashley! We’ve totally frozen these, just without the sauce which we add for baking. Make sure you wrap in parchment or saran wrap and then foil and finally place in a ziploc. 🙂
