I’m bringing Sarah back for another recipe this week because it’s my new favorite salad and with Thanksgiving right around the corner I wanted to make sure I could beg all of you to make it. I was a little weary when I first heard about it, but trust me, no one can get enough of this salad. In fact, we served it at the dinner party we had a few weeks ago and every woman there was begging for the recipe. Plus, it’s national adoption month so we definitely want to chat about Sarah’s cute family in the hopes that someone will choose them for adoption!

It’s Sarah here and Carrian told me I just had to post about our spinach salad with poppy seed dressing recipe. And I am back to remind you that this month is National Adoption Month! and to share with you this perfect holiday (and every other day of the year) salad. I don’t even know where to begin with this spinach salad. When you read what the ingredients are you may question my taste…but I promise you I have really good taste buds, and they tell me that this salad is amazing.

Every time I make this recipe I make a whole boat load (almost). And every single time I have brought it to an event essentially ALL of the almost whole boat load is gone.  One of the best things about this salad, and especially sharing it with you this season, is that it is perfect for holiday dinners and get-togethers simply because it doesn’t require any produce that could be out of season.  You can eat this beauty ALL YEAR LONG! It’s seriously so good!

Want to make it into a dinner? Add Chicken. Want it with some summer fruit? Add strawberries and avocados. Don’t let the simplicity fool you one how rich and delicious this is. Spinach Salad with Poppy Seed Dressing

  • 1 1/2 tablespoons poppy seed
  • 3/4 cup vinegar
  • 3/4 cup sugar
  • 1 1/2 cup oil
  • 3/4 teaspoon mustard dry
  • 1 1/2 teaspoon salt
  • 1 1/2- 2 purple onions sliced thin


  • 2 bunches spinach fresh
  • 1 head lettuce iceberg
  • 1 1/2 pound bacon cooked and crumbled
  • 3 cups swiss cheese grated 3/4 lb
  • 1 cup cottage cheese drained
  • *chicken avocados or fruit are great additions


For the dressing

  • In a mason jar or bowl, whisk together the poppy seeds, vinegar, sugar, oil, mustard and salt.
  • Add the onions and combine.
  • Store in the fridge in a jar until ready to serve.

For the salad

  • Toss all of the ingredients together in a large bowl and then drizzle in the dressing and toss again.
  • Only dress as much as you'd like, no need to use the whole jar if you only want a little dressing.


We love to add chicken and avocados or fresh fruit during the summer
