A long time ago I posted a bbq pork grilled cheese sandwich that our family totally loves because it’s a little bit of everything, saucy bbq pork, gooey cheese and fresh guacamole. I saw the recipe link on pinterest the other day and it got me thinking about what else I could do with a little bbq pork. Since football is going on right now what better way to use it than an awesome tailgating sandwich?! I mean these tailgator nachos were pretty amazing too, but this sandwich is like a tailgating party full of your favorites all smashed into one sandwich. Boom!
As I’ve mentioned before, Cade is a huge South Carolina Game Cocks fan, so when they are playing we love getting on our game shirts and making some of our favorite game day food. Well, the key word is, “some” as I still cannot hack the darned boiled peanuts. I know they are such a true southern game day food, but to me they are so slimy and weird!! Anyway, I may not be making boiled peanuts but I will make bbq pork, baked beans, cornbread or biscuits and coleslaw for the big day. The tricky part is getting that all out to the tailgating party if you’re not just staying home.
On a whim I went for it, I baked up some corn biscuits by Pillsbury (because I couldn’t help but be curious about these new flavors, and sure enough it’s like a sweet cornbread and biscuit had a baby!!), slow cooked bbq pork, baked up some easy baked beans, and let’s be honest I totally bought the coleslaw. Then I threw it all together on the corn biscuits, added a little extra bbq sauce and dug in. Wowza!!! It was a total hit and I completely avoided the boiled peanuts (gag) because Cade was devouring this sandwich. It really is like when you get that perfect bite of salad. You know, like a little lettuce, bacon, tomato, crouton and dressing and it’s like perfection in your mouth? That’s this sandwich. A little everything in every single bite.
How Long Will Pulled Pork Keep?
Pulled Pork will keep for up to 4 days in the refrigerator.
It should be tightly covered or kept in an airtight container.
How Long Will Cole Slaw Keep?
Coleslaw should be kept in the refrigerator in a tightly covered container.
It will keep up to 5 days when properly stored.
Can You Freeze Pulled Pork?
You can keep pulled pork in the freezer for 6-8 months.
Pulled pork should be cooled and then put into a heavy duty freezer bag and kept frozen.

Description
Ingredients
- 2 lbs Boneless Pork Shoulder/Butt
- 2 Cups BBQ Sauce
- 1 Can Corn Biscuits
- Coleslaw with dressing, prepared
- [Baked Beans]
- Extra BBQ Sauce for drizzling
Instructions
- Place the pork in a slow cooker and cover in BBQ sauce.
- Cook on low for 8 hours.
- Shred and set aside.
- Bake the beans according to the recipe above (click the link) and the biscuits according to package directions.
- To assemble the sandwich place the pork, beans, a little bbq sauce, coleslaw and biscuit lid on top and enjoy!
