I was so excited when Carrian offered for me to guest post and she told me how all of you love rich chocolatey desserts so I knew just what to share!

 

Chocolate Whoopie Pies-

 

I’ve liked chocolate ever since I can remember. And I’m no stranger to whoopie pies. Growing up in Pennsylvania, it’s no wonder I’m a whoopie pie lover. Today I’m pleased to share with you a classic chocolate whoopie pie. Made with no shortening, these are both authentic and delicious.

 

That’s what I love most about my homemade whoopie pies. All the ones I find in the store are made with vegetable shortening and that’s one ingredient my family has tried to ditch completely. That means always homemade. Always delicious.

These cookie sandwiches never last long in our house. Everyone loves them so you would think that by now we would just always remember to make a double batch. Not so that we could eat more but so that we would have some to share. One of these days we’ll remember that. Double batch baby.

Will Chocolate Make a Dog Sick?

Chocolate is toxic to dogs and depending on the type and amount of chocolate consumed and the weight of your dog.

If your dog eats a small amount of chocolate, you probably don’t need to worry.

Chocolate may cause an upset stomach with vomiting or diarrhea.

If a dog eats a large amount of chocolate, it could be lethal.

 

Can Chocolate Keep You Awake?

It is recommended that  you avoid chocolate, coffee, tea and soft drinks before bed due to the caffeine and theobromine contained in these foods.

Caffeine and theobromine can interfer with a good nights sleep.

 

Can Cookies Be Frozen?

The best way to freeze cookies is to place them on a parchment lined cookie sheet and freeze.

After they are frozen, you should transfer them to an airtight container or a plastic freezer bag.

Chocolate Whoopie Pies

Chocolate Whoopie Pies
Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

For Cookies

  • ½ cup butter, softened
  • 1 cup dark brown sugar, firmly packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk

For Classic Buttercream Filling

  • 3 cups powdered sugar (confectioner's)
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 tablespoons half and half
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl whip butter and brown sugar until light and fluffy.
  3. Add egg and vanilla.
  4. Beat until well combined.
  5. Sift together the flour, cocoa powder, baking soda, and salt in a separate bowl.
  6. Add the dry ingredients alternately with the buttermilk to the butter/sugar mixture just until combined.
  7. Scoop dough (about 1 1/2 tablespoons each) onto cookies sheets.
  8. Be sure to space at least 2 inches apart to allow for spreading. (I used a medium cookie scoop and thought it was the perfect size.)
  9. Bake 8-10 minutes or until it springs back when touched.

For Classic Buttercream Filling

  1. In the bowl of a stand mixer beat powdered sugar with butter on low speed.
  2. Increase to medium, mixture will be crumbly.
  3. Pour in the half and half cream and vanilla.
  4. Beat on high speed until smooth and fluffy, about 3 minutes.
  5. Place half of cookies upside down.
  6. Top with a generous sized amount of filling.
  7. Place second cookie on top.

Hi folks, as a life long resident of Maine, where Whoopie Pies are in every small town bakery and then some (also home to Wicked Whoopies, as seen on Oprah years ago) I have to say your recipe is a 9.5 out of 10. I’m sorry, buy my dear departed aunts whoopies were my favorite growing up. I just made these an hour ago for a gift for my cousins 70th birthday. I love baking and she wanted something I had baked ….with love! After looking at several recipes, I decided on yours because I wanted to use real butter and not shortening. These are amazing everyone! Seriously, I’ve had 100’s and 100’s of whoopies in my 60 years and these are as good as any….and I made them! LOL Thanks for the recipe, yours is delicious and I’m sure my cousin will LOVE them.
