This chicken is one of those life saver crock pot (slow cooker) recipes. I love that you can throw everything together in less than 5 minutes, let it cook all day and then feel like a hero as you serve it to your family. The only thing you really need to watch out for is how darn much the recipe makes. Scale that sucker back! It’s too much chicken for just our little family! However, that usually means it’s a great opportunity to invite someone over to surprise a neighbor with dinner. And I’m definitely all about that.

Ingredients

For the Chicken
  • 1 Bottle of Kraft Zesty Italian Dressing
  • 1 Tablespoon Cumin
  • 1 Tablespoon Chili Powder
  • 3 Cloves of Garlic, minced
  • 5 LBS Boneless, skinless chicken breasts
Tomatillo Dressing
  • 1 Jalapeno
  • 1 Clove Garlic
  • 1 Tomatillo
  • 1 Handful cilantro
  • 1 lime juiced
  • 1 cup milk
  • 1 cup mayonnaise
  • 1 Package hidden valley ranc
Instructions
For the Chicken
  1. Mix ingredients and pour over chicken in a crock pot and cook on low 4 hours.
  2. Remove chicken and shred.
  3. Place back in crock pot for another hour.
  4. Serve over rice, as a burrito or salad.
For the dressing
  1. Place all ingredients except the mayonnaise into the blender and blend until smooth. Whisk in the mayo and place in the fridge.
Notes
Serve this over homemade or store bought fresh tortillas with lettuce, queso fresco or any cheese, beans, dressing, cilantro and limes of course!
