I’m going to be totally upfront with you, this recipe is one that I like, and our daughters like, but Cade is not a big fan. Which is weird because he’s the coconut lover out of all of us but I guess this recipe just wasn’t for him. I loved it though. Little C especially loved it. She was shoveling the coconut oil kettle corn in as fast as she could. So I guess this is for when we have our girls’ night in and watch a movie and the old man can go play basketball with the guys.

Which is ok by me, I love having those unplugged moments with the girls. Sometimes I’ll start to feel crazy stressed about life, family and these two busy girls (I know, I only have two so who am I to feel busy, right?) and then I’ll unplug from my own needs and social life and just focus on having fun with two girls that are growing up way too fast. It works every time. I guess it’s not really that I’m stressed, it’s that I’ve let my priorities get all mixed up and when that’s not balanced then I don’t feel the peace I need to be a good person and mom. But coconut oil kettle corn and a little Tinker Bell with the girls and all is well in the world. Am I right?

Coconut Oil Kettle Corn

Ingredients 

  • 1/4 Cup Coconut Oil
  • 1/4 Cup Sugar
  • 1/3 Cup Popcorn Kernels
  • Salt to Taste

Instructions 

  • Heat a large pot with a lid, over medium heat and add the coconut oil.
    1/4 Cup Coconut Oil
  • Cook until almost melted and quickly stir in the sugar then add the kernals.
    1/4 Cup Sugar, 1/3 Cup Popcorn Kernels
  • Place the lid on, and using two pot holders to pinch the lid closed, gently slide the kettle back and forth over the burner. It will take a minute for the kernals to start popping, then continue moving the kettle until the popping slows.
  • Remove from the heat and toss with a little salt.
    Salt to Taste

    Oh…. My….. Goodness!!!!!! I’ve been making kettle corn for like 2 years and this WILL BE my new recipe!!! AMAZING I like how you put the serving size on the bottom. 3-4 servings… It just 1 for me!!! 😁
